Job summary

Highgate Hotels is seeking a Cook to prepare all food items for Restaurants, Room Service, Employee Cafeteria and Banquets per standardized recipes. This role emphasizes cleanliness, sanitation, and cost efficiency in a high-volume hotel kitchen. Flexibility for long hours and varied shifts is required.

The Cook should maintain quality, assist in storage/rotation of items and support other kitchen positions as needed, while following health regulations and hotel standards.

Qualifications

• High School diploma or equivalent required or experience in a hotel or related field.
• Culinary experience is required.
• Flexible and long hours may be required.
• Medium work - Exerting up to 50 pounds of force occasionally, and/or 20 pounds of force frequently to lift/move objects.
• Ability to stand during entire shift.
• Able to withstand temperature variations hot and cold.
• Knowledge of menus and preparation per hotel standards.
• Proficient in cooking techniques: charbroiling, poaching, deep-frying, sauté, braising, roasting and par-cooking.

Responsibilities

• Maintain cleanliness and organization of all storage areas.
• Prepare and pre-portion food items prior to service.
• Prepare and display buffet items according to hotel standards.
• Ensure proper handling, storage and sanitation of foods.
• Support kitchen staff and other positions as needed.
• Follow health department and company regulations for safety and storage.
