Prepares food in accordance with current applicable federal, state, and local standards, guidelines and regulations, with our established policies and procedures, and as may be directed by the Dietary Supervisor, to assure quality food service is always provided. Assists in maintaining the kitchen work areas, and keeping equipment, utensils, and service areas clean and orderly. When not cooking, assist with meal preparation, dining room assistance, dishwashing, and cleaning the kitchen. Assists in the kitchen area prior to, during, and after meals are served to the residents and staff.
Essential Functions as Cook
- Prepare food for regular and therapeutic diets according to the planned menu, while utilizing standardized recipes to do so.
- Ensure that food prepared is of proper quantity and in accordance with established time schedules.
- Utilize correct portion control utensils during the preparation and duration of food service to ensure the proper quantity of food is prepared.
- Check and maintain proper food temperatures during food preparation and services, making sure to record those temperatures according to the established policy.
- Ensure an adequate supply of food, supplies, etc. are always available, reporting inadequate stock levels to the supervisor in a timely manner.
- Washes hands before handling food, before touching clean dishes and utensils, and after touching anything soiled.
- Uses food preparation equipment properly, cleans and stores appropriately, and reports repairs needed.
- Helps keep kitchen floor dry, wiping or mopping up spills, immediately.
- Checks in and stocks truck deliveries.
- Reports any evidence of pests or rodents in kitchen area to Dietary Supervisor.
- Maintains exemplary customer service principles for efficient food preparation.
- Assures personal compliance to all state and federal regulations including blood borne pathogens, infection control, use of hazardous materials, and fire safety.
Essential Functions as Dietary Aide
- Assists cook with meal preparation, as directed.
- Helps prepare, portion, wrap, cover, and refrigerate food for meal(s) assigned; for example, bags bread, dips jelly/fruit/desserts, makes toast, pours juice and milk, makes coffee/tea, etc.
- Sets up trays and serving carts according to established procedures, delivers to unit(s).
- Helps clear trays from dining room and returned tray cart(s), scraping waste into trash cans.
- Uses food preparation equipment properly, cleans and stores appropriately, and reports repairs needed.
- Washes dishes, pots and pans, and completes general cleaning.
Qualifications
- Sufficient education to demonstrate functional literacy, including reading, writing, weighing, measuring capabilities, and simple math skills.
- Knowledge of large scale & therapeutic food prep.
- Kitchen/Dietary/Food service experience (1 year preferred, however, on-the-job training provided).
- Long-Term care experience (1 year preferred)
