Job summary

Ohio Department of Youth Services is seeking a Cook to lead and train youth workers in food preparation, sanitation and storage at the Indian River Juvenile Correctional Facility. Qualifications

• Formal education in arithmetic including addition, subtraction, multiplication and division.
• 6 months of training or 6 months of experience in food preparation, sanitation and storage and use of food service equipment in institutional, school or restaurant settings.

Responsibilities

• Provide work direction and training to youth workers and youth apprentice in food preparation, sanitation and storage of food.
• Monitor service lines, loading of carts, storage of foods and general cleaning.
• Work all stations on a rotating basis including cooking, dish washing, serving line, and cleaning.
• Operate commercial kitchen equipment to cook food.
• Prepare salads, desserts, breads, beverages, sandwiches and cut vegetables and meats.
• Ensure safety and sanitation of the assigned area.
• Operate cash register; prepare daily paperwork including HAACP forms.
• Supervise youth workers and follow safety procedures.
• Set up food-lines and portions in line with dietary requirements.
• Set up food carts according to daily recipes.

• Clean work area, equipment & utensils; ensure safety & sanitation of assigned area;
• Operate cash register; prepare daily paperwork to include but not limited to HAACP forms;
• Supervise youth workers assigned to work area; follow youth general safety& security procedures;
• Set up food-line & portions of food in compliance with established dietary requirements;

About the Role

As a Cook, you will work under direction of the Food Service Manager. This position requires thorough knowledge of food preparation, sanitation, storage & operation of food service equipment to prepare, cook & serve food. Other duties include, but are not limited to:
