Elliotts Oyster House on Seattle's waterfront is hiring experienced cocktailers who can craft classic and house cocktails with speed and precision, while pairing spirits with oysters and Pacific Northwest seafood in a high-volume setting.

Qualifications

• 3+ years of cocktailing experience in a fast-paced full-service restaurant.
• Strong tray carrying skills (cocktail and oval trays).
• Ability to multitask while maintaining composure and accuracy.
• Ability to lift up to 40 lbs. and stand for extended periods.
• Must be 21+.
• Weekend availability and reliable attendance.

Responsibilities

• Build classic and house cocktails with precision and maintain prep, batches, and mise en place.
• Guide guests through oysters, spirit and wine pairings.
• Execute high-volume service with timing, accuracy, and attention to detail.
• Maintain a clean, organized bar environment throughout the shift.
• Collaborate with service team for smooth coordination.
• Complete opening/closing checklists, restock, and sanitize bar surfaces and glassware.

We're looking for experienced, confident cocktailers who can deliver craft-quality cocktails at speed and enjoy pairing spirits with oysters and PNW seafood. What You'll Do

• Build classic and house cocktails with precision, and maintain all prep, batches, and mise en place to support consistent service quality.
• Guide guests through oysters, spirit and wine pairings, and the restaurant’s sustainability focus to elevate their overall experience.
• Execute high-volume service with consistent timing, accuracy, and attention to detail.
• Maintain a clean, organized, and efficient bar environment throughout the shift.
• Collaborate with a strong, supportive service team to ensure smooth and coordinated service flow.
• Complete opening and closing checklists, restock products, and clean and sanitize bar surfaces, tools, and glassware to uphold safety and quality standards.

What You Bring

Must Haves

• 3+ years of cocktailing experience in a fast-paced full-service restaurant.
• Strong tray carrying skills (cocktail and oval trays).
• Ability to multitask while maintaining composure and accuracy.
• Ability to lift up to 40 lbs. and work on your feet for extended periods (reasonable accommodations available).
• Must be 21+
• Weekend availability and reliable, consistent attendance.

Preferred

• At least 6 mos. bartending experience.
• 2+ years in fine dining service.

Pay & Compensation

• Average $32-$42 per hour, including commissions.
• $9/hour base rate + 12% pooled commission on direct gross sales + 5% pooled commission on all gross beverage sales (excluding bottled wine).
• If base pay plus commissions do not meet the Seattle minimum wage for the workweek, cocktailers are paid at least $21.30/hr.
