Job summary

Sartori Company in Antigo, WI is seeking a Table Operator to run the drain table and fines saver during the cheese-making process. You will monitor curd pH and moisture and transfer curd to the hoop filling machine on a 2nd shift in a 12-hour rotating 2/2/3 schedule at our Antigo, WI facility.

This role requires familiarity with automated equipment, strong math/reading skills, and ability to maintain product quality while following HACCP and GMP protocols.

Qualifications

• High school diploma or GED required.
• 2-3 years in food manufacturing desirable.
• Knowledge of automated equipment interfaces.
• Strong communication skills, verbal and written.
• Ability to read and interpret recording charts.

Responsibilities

• Monitor whey and curd from vats to table and whey removal.
• Maintain curd consistency using agitators and scraping.
• Follow cheese making table recipes and procedures.
• Measure curd pH and moisture.
• Transfer curd to hoop filling machine.
• Enter data into data collection computer and record keeping.
• Perform pre-operational inspections and report maintenance.
