Job summary

Chartwells Higher Ed at University of Redlands is seeking a Catering Captain for a full-time position in Redlands, CA. You will coordinate catering staff, schedule events, and ensure food is prepared, served and cleared on time under the Catering Director’s supervision.

Responsibilities include assigning workloads, briefing staff, resolving issues, presenting menu items, delivering to sites, and maintaining HACCP compliance while upholding sanitation standards.

Qualifications

• Must possess or obtain a valid food handler's permit and/or alcohol servers permit where required by state law.
• A valid driver's license may be required.

Responsibilities

• Coordinates catering staff schedules to ensure functions are delivered, served and cleared on time.
• Prepares and serves food at scheduled functions under supervision.
• May drive a truck to deliver food and beverages to catered functions.
• Determines workload requirements from catering orders and communicates setup plans.
• Interacts with customers, addresses last-minute changes, and resolves problems.
• Maintains HACCP standards and sanitation of equipment and serving areas.
• Ensures proper presentation and portion control, and handles setup of rooms.
