Responsibilities:

  • Perform all meat and seafood preparation tasks, including scraping, cubing steaks, grinding meats, and cutting or processing according to specifications.
  • Order meat and seafood products accurately and in a timely manner to maintain required par levels for smooth operation.
  • Weigh and portion meat and seafood items in accordance with standard procedures.
  • Receive, inspect, code, rotate, and store all meat and seafood deliveries appropriately.
  • Verify quality and freshness of all received products to ensure compliance with company standards.
  • Report any equipment malfunctions or maintenance needs promptly.
  • Comply with hygiene requirements and food safety standards at all times.
  • Maintain a clean, safe, and hazard-free work environment.
  • Monitor and minimize product wastage through proper handling and tracking.
  • Assist in other butcher rooms or departments as required.
  • Place meat and seafood orders in the absence of the Head Butcher.
  • Train new butchers or butcher helpers as assigned.
  • Perform additional tasks as requested by the chef.

Qualifications:

  • Minimum of 3 years of experience as a butcher, including whole animal butchery.
  • Advanced knife skills and strong knowledge of meat and seafood preparation techniques.
  • Solid understanding of food safety and hygiene regulations.
  • Ability to read, interpret, and follow menu specifications and preparation instructions.
  • Capable of managing high-volume workloads effectively and efficiently.
  • Highly organized, proactive, and able to work independently or as part of a team.
  • Flexible schedule, including availability for night shifts, weekends, and holidays.
  • Strong time management skills with the ability to meet tight deadlines.
  • Ability to accurately monitor and report product wastage.
  • High school diploma or equivalent preferred.
