The Sous Chef position at Borgata, part of MGM Resorts International in Atlantic City, leads kitchen operations, ensuring exceptional food quality and guest satisfaction through strong leadership and service.

You will train staff, manage inventory, coordinate with the Executive Chef, and drive profitability while upholding safety, sanitation, and high-volume service standards.

Competenze

• High school diploma or GED required.
• 2+ years of supervising experience.
• 5+ years in high-volume restaurant production within a hotel/casino environment preferred.

Mansioni

• Train Master Cooks, Cooks, Pantry Workers and Helpers on job responsibilities.
• Ensure requisitions are processed properly and stored in designated area.
• Label and date all products to ensure safekeeping and sanitation.
• Maintain knowledge of base sauces, stocks and soups.
• Ensure food quality is superior and correct any irregularities.
• Communicate with management and staff to address guest and employee needs.
• Assist Executive Chef with purchasing, receiving, purveyor lists and inventory.
• Prepare and administer kitchen schedules.
• Assist Executive Chef by establishing goals focusing on profit, product and people.

THE JOB:

THE DAY-TO-DAY:

• Train Master Cooks, Cooks, Pantry Workers and Helpers on job responsibilities
• Ensure requisitions are processed properly and placed in designated area
• Label and date all products to ensure safekeeping and sanitation
• Maintain knowledge, understanding and preparation of base sauces, stocks and soups
• Ensure food quality is superior and take action to correct any irregularities
• Communicate with management and service staff in order to fulfill and address any issues or needs requested by guests and employees
• Assist the Executive Chef by controlling purchasing, receiving, purveyor lists and inventory of all kitchen items
• Prepare and administer kitchen schedule
• Assist Executive Chef by establishing goals and objectives that focus on profit, product and people

THE IDEAL CANDIDATE:

• High School Diploma or GED required
• 2+ Years ofsupervising experience required
• 5+ Years of experience in a high-volume restaurant production as well as in a hotel/casino environment preferred

Pay Range:

The pay range for this role is: $45,300.00 - $62,300.00

This range represents a good faith estimate of the salary range that MGM reasonably expects to pay for the position upon hire. The actual salary offer will take into account a wide range of factors, including location.

Employees in this position are eligible to participate in medical, dental, vision, life insurance, 401(k) plans, and time off plans. Specific program offerings vary by eligibility factors such as geographic location, employment status, and union membership.
