Job summary

Eataly in Los Angeles seeks a Bread Production Manager to lead a 24-hour bakery producing breads, Roman style pizza, rolls and focaccia, while guiding a 15-20 person team of Bakers and Sales Associates.

You will manage hiring, scheduling, payroll, training, and performance feedback, ensuring recipes and quality standards align with authentic Italian practices. Strong communication and time management are essential.

Qualifications

• 5+ years in bread production
• 2+ years managing a sales and production team
• Excellent communication skills
• Outstanding time management
• Proficiency in Microsoft Office
• Degree from a post-secondary culinary arts training program highly preferred

Responsibilities

• Oversee a 24-hour-operating bakery including weekends, nights and holidays
• Hire, schedule, approve vacation, submit payroll, train staff, provide feedback and motivation
• Coordinate with GM of Retail and Executive Chef on daily bakery activities and recipes
• Order and monitor inventory of ingredients and products; track transfers and waste
• Review sales and cost data; monitor budget and implement cost controls
• Maintain a clean, sanitary production area per health standards
• Handle incidents involving employees and guests; escalate as needed
• Perform other duties as assigned
