Job Summary:

The Bertocchi Cooker Operator position is responsible for maintaining functionality of the cooker system during production and documenting each system parameter set in place and each apple varietal used, as well as, batching each Vitamin C solution.

Essential Duties and Responsibilities
  • Learn and understand the daily Bertocchi cooker operator procedure forms; properly fill out and sign off on these forms on a daily basis.
  • Learn the time frames given for each batch used for production and utilize the time efficiently to assure that the job is done correctly and on time.
  • Use personal protective equipment as required for each task performed.
  • Maintain a record of utility tools used, and return them cleaned and properly store the tools after job duties have been completed.
  • Understandshow to check the Vitamin C ingredients:
    • Description of Ingredient used.
    • Name of the supplier.
    • Confirmation of the expiration date.
    • Inspection of ingredient for mold/yeast.
  • Learn how to weigh an ingredient accordingly using a scale.
  • Understand how to use the computer system and check the following settings:
    • Temperature Settings.
    • Product Flow Meters.
    • Tank Levels.
    • Pump Speeds.
    • Air Pressure Flow.
  • Be able to assemble and disassemble the Turbo Extractor:
    • Inspection of Grinder
    • Inspection of Dicer.
    • Inspection of Screen.
  • Be able to change screen sizes on a daily basis, dependent on quality of the apples.
  • Be able to perform visual quality checks throughout the cooker system by taking samples of the apple sauce.
  • Be able to perform the CIP system on the cooker.
  • Be able to follow Standardized Operating Procedures (SOP's).
  • Maintain designated area cleaned and organized.
  • Responsible for establishing priorities and working independently without direct supervision.
  • Follows all Manzana Good Manufacturing Practices (GMP).
  • Follow safety rules, including those relating to Personal Protective Equipment (PPE).
  • Manzana Food Products charges all employees with the responsibility to fully participate in all company policy and program initiatives for Food Safety, Food Quality and Food Defense; each employee, no matter their position or job function serves a key role in contributing to safe, quality food.
  • Perform other duties as assigned or required.

Education/Experience

High School Diploma, or equivalent

Knowledge
  • Must have basic mechanical knowledge working with tools, scales, and pumps.
  • Be able to Add, Subtract, Multiply, and Divide.
Skills
  • The ability to work with computer systems.
  • The ability to work from a ladder or platform in a safe manner.
  • The ability to identify and report any quality deviations.
  • The ability to learn multiple jobs and the proper procedures for performing these jobs.
  • The ability to work both independently and within a team.
Work Environment

This position is performed in a food-processing/production environment and may involve exposure to moving equipment, conveyors, high-pressure water, noise, wet surfaces, varying temperatures, and agricultural materials. Employees must follow all required safety, sanitation, and PPE requirements. Proper PPE and safety procedures are required at all times. The employee must be able to safely perform the physical requirements of the position, including standing, walking, bending, kneeling, reaching, pushing, pulling, and lifting as required for assigned duties.


This position regularly works 8- to 10-hour shifts, Monday through Friday, with occasional Saturday work based on production and business needs consistent with applicable laws and company policies.

Required PPE may vary by work area and assigned task. Employees must wear all PPE required by company policy, hazard assessments, food-safety requirements, and posted area-specific requirements.


PPE may include:
Hairnet
Beard net
Safety glasses or approved eye protection.
Chemical-resistant gloves appropriate for the chemical and task.
Chemical/water-resistant protective clothing.
Safety boots with appropriate slip-resistant soles.
Hearing protection in designated areas.
Gloves or other task-specific PPE when required.
Additional PPE identified through the applicable safety assessment, SDS, sanitation procedure, or posted area requirements.
Employees are responsible for properly wearing, maintaining, and using required PPE at all times.

To protect food safety and prevent contamination, employees entering production areas must comply with all personal hygiene and GMP requirements.

The following are not permitted in production areas:
Glitter, sparkles, or loose decorative materials.
False eyelashes or eyelash extensions that present a contamination risk.
False, artificial, or acrylic nails.
Nail polish or other nail coatings.
Jewelry, including rings, bracelets, watches, necklaces, earrings, piercings, or other loose accessories, except as specifically permitted by company policy.
Items or clothing containing loose, fraying, dangling, or shedding materials that could present a contagion risk.
Loose personal items that could fall into or contaminate product.
Any other personal item, accessory, cosmetic, or material prohibited by company GMP and food-safety policies.

Employees must follow all posted hygiene, handwashing, personal protective equipment, and food-safety requirements when entering or working in production areas.
