You will remove stomach, intestines, liver, and pluck, follow rabbi tag protocols, and ensure proper knife sanitation. The role requires attention to detail and the ability to stand for extended periods in a hot, humid processing environment.

Responsibilities

• Remove exposed stomach by pulling bung and then pushing down on paunch; take care not to rupture the stomach.
• Remove stomach/intestines, liver, and pluck.
• Kosher cattle, rabbi tag is removed and put on lung.
• Rinse apron and hands.
• Steel knife, then place knife in sanitizer, remove second knife from sterilizer and begin procedure on next animal.
• Knives cannot be sterilized first and then sharpened due to cross contamination from steel.
