Kennedy Concepts in Gatlinburg, TN, is seeking an Assistant Pit Master to support the Pit Master in preparing and executing the restaurant’s BBQ program. This hands-on culinary role covers meat prep, smoking, fire management, sanitation, and documentation to ensure consistent, high-quality BBQ.

The role collaborates with the Pit Master, Executive Chef, Sous Chefs, and BOH team to meet daily production needs, while developing advanced BBQ skills and knowledge.

Qualifications

• Previous experience in BBQ production, meat preparation, line cooking, or another professional kitchen role preferred.
• Willingness to learn company BBQ methods, smoke profiles, and production standards.
• Ability to follow recipes, production schedules, and detailed instructions consistently.

Responsibilities

• Receive daily BBQ production assignments and directions from the Pit Master.
• Coordinate with Pit Master and Sous Chefs to prepare smoked products as scheduled.
• Communicate progress, completion times, shortages, and quality concerns promptly.
• Follow recipes, food-safety requirements, and BOH procedures.
