Job summary

Pawtucket Patriot Bar & BBQ in Pawtucket, RI is seeking a Pitmaster Assistant & Kitchen Prep to join a fast-paced, live-fire kitchen. You will work with our lead pitmasters to execute low-and-slow cooks, manage the smoker, and handle prep in a high-volume environment.

This role offers hands-on learning, competitive pay, and opportunities to grow into Lead Pitmaster roles as you gain experience with wood selection, temperature control, and food safety.

Qualifications

• Minimum 1–2 years in a kitchen environment with direct BBQ pits/smokers experience.
• Solid understanding of live-fire cooking and wood/,airflow control.
• Ability to lift up to 50 lbs and stand for long periods.

Responsibilities

• Pit & Fire Management: operate and monitor heavy-duty rotisserie smoker; maintain temps and airflow.
• Meat Preparation: trim, season, and prep large volumes of meat per recipe profiles.
• Cook Execution: wrap meats, track internal temps, manage holding/resting in warming towers.
• Kitchen Prep & Line Support: keep prep line clean; portion and pull meats to order; follow food safety guidelines.
• Maintenance & Cleanliness: clean smokers, grease traps, and extraction equipment; keep area clean.
