Job summary

Thompson Austin - 5th and Brazos is seeking a Banquet Chef de Partie to lead a culinary station in a luxury, high-volume banquet kitchen. You will own BEO execution, station prep, and staff mentorship to deliver flawless, chef-driven cuisine for events from VIP dinners to large corporate functions.

The role requires elite organizational skills, the ability to scale recipes precisely, and the calm under pressure to maintain service standards during busy events.

Qualifications

• Experience in a high-volume, luxury hotel or large-scale catering environment.
• Current Manager's Food Safety Certification (ServSafe or equivalent).
• Ability to read and execute daily BEOs with precise portioning and timing.

Responsibilities

• BEO Execution & Station Management.
• Read, analyze, and execute daily BEOs for exact portioning and dietary mods.
• Independently manage daily prep for designated station.
• Direct and mentor Banquet Cooks on plating and recipe specs.
• Execute batch cooking with fine-dining aesthetics.
• Adapt to changes in guest counts, timelines, or dietary restrictions.
• Set up and breakdown banquet lines and equipment.
• Enforce FIFO inventory to control costs.
• Maintain sanitation and temperature logs.
