Job summary

Omni Amelia Island Resort & Spa is seeking cooks for banquet service to provide high-quality prepared items per BEOs and prep lists. You will ensure portion control, proper temperatures, and sanitation while delivering exceptional guest experiences at a luxury hotel.

Entry to advanced levels available; candidates should have 6 months to 3 years of banquet cook experience, strong math skills, and the ability to work weekends and holidays.

Qualifications

• Minimum 6 months to 3 years relevant culinary experience, preferably in high volume upscale hotel banquet operation.
• Familiar with batch and quantity cooking.
• Thorough knowledge of food handling and preparation techniques.
• Basic math skills to understand recipes and measurements.
• Good eye/hand coordination for kitchen work.
• Ability to work in a fast-paced high-pressure environment while preserving Omni standards.
• Ability to handle stress with a calm, welcoming demeanor.
• Ability to work with others across departments.
• Ability to prioritize, organize and follow up.
• Ability to produce high volumes while maintaining quality.
• Knowledge of sanitation standards.

Responsibilities

• Prepare all items on BEOs or cover sheets according to standard procedure.
• Prepare all items on prep list following standard procedure.
• Maintain high quality by inspecting all food products for quality.
• Check portion control, weights and counts prior to function.
• Cook according to SOP and monitor cooking times/temps.
• Follow storage procedures for walk-in items and returns.
• Maintain cleanliness of work area and equipment.
• Ensure walk-in and prep areas meet Health Department standards.
• Prepare food of consistent quality per recipes and standards.
• Date and rotate perishables, manage stock levels.
• Coordinate with other cooks for events or special requirements.
• Perform other duties as assigned by Culinary leadership.
