Job summary

Morimoto at MGM Grand, part of MGM Resorts, seeks an engaging Restaurant Assistant Manager to oversee daily operations and deliver memorable guest experiences in a fine dining setting in Las Vegas.

You will lead by example, plan floor coverage, supervise service, and collaborate with the Chef and management to ensure seamless guest visits. The ideal candidate has 2+ years in a supervisory role and a passion for hospitality.

Qualifications

• Minimum 21 years of age and high school diploma or equivalent.
• 2+ years of restaurant experience in a supervisory or management role.
• 3+ years in food and beverage with fine dining experience preferred.
• Working knowledge of Culinary Union contracts is advantageous.
• Wine and spirits knowledge is a plus.

Responsibilities

• Create daily floor plans to ensure proper station coverage.
• Supervise dining room service during hours of operation.
• Conduct employee evaluations and address attendance issues.
• Coordinate with the Chef on food service and menu issues.
• Communicate with management, chefs, and staff to fulfill guest needs.

THE JOB:

Morimoto at MGM Grand is seeking an engaging and motivated Restaurant Assistant Manager to help oversee daily restaurant operations while creating memorable guest experiences. In this role, you will lead by example, fostering a welcoming atmosphere through exceptional service and hospitality. By understanding each guest's unique needs and preferences, you will take ownership of their experience, ensuring every visit is seamless, enjoyable, and memorable. Your leadership, attention to detail, and passion for guest service will help create the moments that keep guests coming back long after their visit.

THE DAY-TO-DAY:

• Make daily floor plans per shift to ensure proper rotation and coverage of stations
• Supervise floor service in dining rooms during hours of operation
• Perform employee evaluations and manage issues related to attendance records
• Maintain communication with the Chef on all food service and menu issues
• Communicate with management, chefs and culinary staff in order to fulfill and address issues or needs requested by guests and employees
• Order supplies through the IP System and Purchasing; prepare purchase requisitions for any outlets from the warehouse or support departments
• Keep inventory form and stocking area updated
• Inspect food coming from support departments to assure freshness and quality
• Maintain direct communication with guests for special requests and large party reservations

THE IDEAL CANDIDATE:

• 21+ years of age
• High School Diploma, GED or equivalent required
• Work varied shifts, to include weekends and holidays required
• 2+ years of prior relevant experience working in a restaurant required
• 3+ years of relevant food and beverage experience in a supervisory or management role preferred
• Working knowledge of Culinary Union contracts
• Fine dining experience preferred
• Prior experience working in a fine dining restaurant preferred
• Basic knowledge of wine and spirits; sake knowledge is a plus
