Carbone at ARIA in Las Vegas is seeking an Assistant Manager to lead daily operations in a high‑energy, fine‑dining setting. You will drive guest experiences with a polished presence, supervise service, and mentor a team to uphold Carbone’s iconic style within MGM Resorts’ luxury standards.

Qualifications

• High school diploma or equivalent required.
• 2+ years of relevant experience in high-volume, fine dining managerial roles.
• Able to work varied shifts, including weekends and holidays.
• Must be 21 years of age or older.
• Experience managing employees under a CBA is preferred.
• Knowledge of liquor, wine, and spirits is preferred.

THE JOB:

As an Assistant Manager for Carbone at ARIA , you will support the daily operations of a renowned, upscale Italian dining destination by leading with a strong service mindset and attention to detail in a high‑energy, fine‑dining environment. You will set the stage for exceptional guest experiences through your polished presence, leadership, and commitment to excellence, guiding your team to deliver seamless, personalized service that reflects Carbone’s iconic style and ARIA’s luxury standards. By understanding each guest’s unique preferences and expectations, you will help create memorable, elevated dining moments and WOW experiences that extend far beyond their visit.

THE DAY-TO-DAY:

• Make daily floor plans per-shift to ensure proper rotation and coverage of stations
• Supervise floor service in dining rooms during hours of operation
• Perform employee evaluations and manage issues related to attendance records
• Maintain communication with the Chef on all food service and menu issues
• Communicate with management, chefs and culinary staff in order to fulfill and address issues or needs requested by guests and employees
• Order supplies through the IP System and Purchasing; prepare purchase requisitions for any outlets from the warehouse orsupport departments
• Keep inventory form and stocking area updated
• Inspect food coming from support departments to assure freshness and quality
• Maintain direct communication with guests for special requests and large party reservations

THE IDEAL CANDIDATE:

• High School Diploma, GED or equivalent required
• 2+ Years of prior relevant experience required
• Work varied shifts, to include weekends and holidays required
• Must be 21 years of age or older
• Previous experience in a High-Volume, Fine Dining outlet as a manager or similar role preferred
• Previous experience managing employees under a collective bargaining agreement preferred
• Working knowledge of Liquor, Wine, and/or Spirits preferred
