Job summary

MGM Resorts International invites applications for a Morimoto at MGM Grand Restaurant Assistant Manager to oversee daily operations and create memorable guest experiences. Lead a team, ensure smooth service, and maintain strong collaboration with culinary staff to deliver exceptional dining experiences.

The role requires a hands-on leader who can manage shifts, coach staff, and uphold quality standards in a fine-dining environment at MGM Grand. Weekend and holiday availability is expected.

Qualifications

• High School Diploma or GED required.
• 2+ years of restaurant experience.
• 3+ years in a supervisory or management role in food & beverage.
• Working knowledge of Culinary Union contracts.
• Fine dining experience preferred.
• Wine and spirits knowledge; sake knowledge is a plus.
• Ability to work varied shifts, including weekends and holidays.

Responsibilities

• Make daily floor plans per shift to ensure proper rotation and coverage of stations.
• Supervise floor service in dining rooms during hours of operation.
• Perform employee evaluations and manage attendance-related issues.
• Maintain communication with the Chef on all food service and menu issues.
• Communicate with management, chefs and culinary staff to fulfill guest and employee needs.
• Order supplies through the IP System and Purchasing; prepare purchase requisitions for outlets.
• Keep inventory forms and stocking areas updated.
• Inspect food from support departments to ensure freshness and quality.
• Maintain direct communication with guests for special requests and large party reservations.

THE JOB:

Morimoto at MGM Grand is seeking an engaging and motivated Restaurant Assistant Manager to help oversee daily restaurant operations while creating memorable guest experiences. In this role, you will lead by example, fostering a welcoming atmosphere through exceptional service and hospitality. By understanding each guest’s unique needs and preferences, you will take ownership of their experience, ensuring every visit is seamless, enjoyable, and memorable. Your leadership, attention to detail, and passion for guest service will help create the moments that keep guests coming back long after their visit.

THE DAY-TO-DAY:

• Make daily floor plans per shift to ensure proper rotation and coverage of stations
• Supervise floor service in dining rooms during hours of operation
• Perform employee evaluations and manage issues related to attendance records
• Maintain communication with the Chef on all food service and menu issues
• Communicate with management, chefs and culinary staff in order to fulfill and address issues or needs requested by guestsand employees
• Order supplies through the IP System and Purchasing; prepare purchase requisitions for any outlets from the warehouse orsupport departments
• Keep inventory form and stocking area updated
• Inspect food coming from support departments to assure freshness and quality
• Maintain direct communication with guests for special requests and large party reservations

THE IDEAL CANDIDATE:

• 21+ years of age
• High School Diploma, GED or equivalent required
• Work varied shifts, to include weekends and holidays required
• 2+ years of prior relevant experience working in a restaurant required
• 3+ years of relevant food and beverage experience in a supervisory or management role preferred
• Working knowledge of Culinary Union contracts
• Fine dining experience preferred
• Prior experience working in a fine dining restaurant preferred
• Basic knowledge of wine and spirits; sake knowledge is a plus
