JOB SUMMARY: Supports the F&B Assistant Director in day-to-day operation of the F&B department, including updating and maintaining all outlets throughout the property. Ensures the cleanliness and sanitation of all work areas and equipment in accordance with Health Department standards. The Assistant F&B Manager will work with the management team to lead the tactical implementation of strategic initiatives under the direction of the Director of Food and Beverage. Working closely with all department team members, creates a positive guest experience throughout the property.
JOB RESPONSIBILITIES:
- Support the Director of Food and Beverage in all aspects of F&B quality, cost control, and inventories.
- Respond to inquiries regarding the financial performance of the F&B department in the absence of the F&B Director.
- Monitor and ensure operating procedures are consistently met.
- Communicate effectively with management and staff across departments.
- Oversee service flow on the gaming floor, property bars, entertainment, restaurants, and events.
- Provide leadership to F&B hourly staff.
- Perform duties of all bars, service wells, and restaurants as needed.
- Work with managers to monitor and control labor costs.
- Maintain adequate coverage in F&B outlets based on business needs.
- Assist with hiring, training, evaluating, and counseling F&B team members.
- Ensure consistency in recipes, measurements, and service standards.
- Ensure prep items meet standards and are stored securely.
- Inspect serving areas for safety and sanitation.
- Restock and rotate products properly.
- Research and resolve equipment malfunctions promptly.
- Ensure proper use of equipment and cleaning products per standards.
- Work flexible shifts to meet business demands.
- Report concerns or opportunities to the Director of Food & Beverage.
- Provide excellent service to internal and external guests, ensuring their satisfaction and handling guest interactions professionally.
EDUCATION AND EXPERIENCE:
- Previous F&B management experience preferred.
- High school diploma or equivalent.
- Must be 21 years or older.
- Pass all pre-screening and background checks.
- Internal candidates must be in their current role for at least six months with no recent disciplinary actions.
- Ability to work various shifts, including days, nights, weekends, and holidays.
- Obtain necessary work cards and non-gaming registration as required.
