Theoceanac in Atlantic City, NJ seeks an Assistant Executive Steward responsible for maintaining top cleanliness and sanitation across the property and equipment. You will supervise staffing, ensure HACCP/ServSafe compliance, and manage inventory and costs.

Responsibilities include inspections, equipment requisition, cost-control of supplies, and collaboration across stations. The role requires English proficiency and a willingness to learn IBM Stratton Warren with standard office tools.

Qualifications

• Associate degree and three years supervisory experience in volume staff supervision.
• Knowledge of cleaning chemical use in warewashing environment.
• Knowledge of kitchen equipment and small wares.
• Ability to set up systems for inventory control and cost reports.
• Read/write English; basic Spanish helpful.

Responsibilities

• Maintain highest cleanliness and sanitation across property and equipment.
• Inspect equipment and kitchen areas to ensure sanitary procedures.
• Requisition new and replacement equipment as needed.
• Monitor cleaning supplies to control costs without compromising quality.
• Maintain inventory of dinnerware, flatware and glassware; order china, glass and silver.
• Develop and administer cleaning specifications for equipment.
• Follow ServSafe and HACCP guidelines throughout preparation steps.
• Assist at all stations when required.
