Qualifications

• Two or more years of experience in a professional kitchen.
• Experience preparing dough from scratch.
• Experience working with a high-temperature pizza oven (Forno or equivalent).
• Understanding of dough fermentation, hydration, proofing, and baking.
• Thrives in a fast-paced, high-volume environment.
• Availability to work evenings, weekends and holidays.
• Able to stand for extended periods and lift up to 50 pounds.

Responsibilities

• Prepare, mix, ferment, portion, and maintain pizza dough per recipes.
• Monitor dough hydration, fermentation schedules, proofing, and quality control.
• Stretch, top, and bake pizzas while maintaining consistency and quality.
• Prepare sauces, proteins, vegetables, and daily ingredients.
• Ensure proper rotation, storage, and inventory practices.
• Maintain a clean, organized, and sanitary workstation.
