Job summary

The Fullerton Hotel Singapore is seeking an Outlet Manager to assist the manager with the outlet operating budget, revenues and labour costs, ensuring profitability and smooth service.

You will supervise staff, deliver efficient, courteous F&B service, ensure menu and wine list specifications, maintain mise-en-place and cleanliness, uphold safety standards, conduct briefings and appraisals, and coordinate with the Chef on promotions and upselling opportunities.

Qualifications

• Minimum GCE O’ level with at least 3 years related experience.
• Strong planning and organisational skills to run a streamlined operation.
• Able to work in a fast paced environment.

Responsibilities

• Assist the Manager for the outlet operating budget including revenues, labor costs and profitability.
• Assist the Manager to run the operation and provide efficient, expedient and courteous service to all guests.
• Supervise the staff assigned and ensure that all phases of Food & Beverage service are performed.
• Ensure drinks and food dishes served are according to menu and wine list specifications, properly presented, and at correct temperatures.
• Daily check restaurant preparation, mise-en-place, table cleanliness, crockery, cutlery and glassware; monitor staff appearance.
• Ensure strict safety regulations are followed.
• Hold daily briefings with staff, review occupancy forecasts, reservations, complaints and issues.
• Conduct staff appraisals and discipline.
• Inspect outlet to ensure cleanliness of linen, equipment, fixtures and furniture, and proper table setups.
• Ensure lighting, sound systems and air-conditioning are well maintained.
• Monitor guest service and attend to guests; anticipate complaints and take corrective action.
• Coordinate with Chef and beverage department for promotions and up-selling.
