Job summary

The Capitol Kempinski Hotel Singapore is seeking a Chef de Partie to join our kitchen brigade. You will prepare mise en place, assist with food preparation and presentation, and ensure stations meet high standards of cleanliness and safety.

Ideal candidates have at least 2 years in a similar role, can work across line positions, and collaborate well in a team. HACCP and health and safety rules familiarity is required.

Responsibilities

• Set up the assigned workstation with all ingredients and cooking equipment.
• Prepare all food items in a sanitary and timely manner.
• Follow recipes and presentation specifications from the Executive Chef.
• Restock items as needed and maintain cleanliness for food safety.
• Assist with receiving and storing goods and maintaining storage areas.
• Maintain sanitation and health standards in work areas at all times.
• Attend briefings and participate in training.
• Follow F&B safety and hygiene policies.

SCOPE

Reporting to the Junior Sous Chef, the Chef de Partie will prepare the mise en place and handle food preparation and assist with food presentation as part of the kitchen brigade.

OVERALL OBJECTIVES

• Set-up the assigned workstation with all the needed ingredients and cooking equipment
• Prepare all food items as directed in a sanitary and timely manner
• Follow recipes, and presentation specifications as set by the Executive Chef
• Restock all items as needed throughout shiftClean and maintain station for food safety, workplace safety & sanitation
• Requisite daily perishable & dry supplies for the assigned workstation if necessary
• Understand and practice the proper usage all equipment in station and responsible for cleanliness & maintenance of them
• Assist with checking, receiving and storing of goods and maintenance of storage areas
• Maintain sanitation, health and safety standards in work areas at all given time
• Attend all briefings and participate in training.
• Follow food and beverage safety and hygiene policies and procedures.
• Other ad-hoc duties
