Chapter One by Fables Specialty Coffee is the next phase of our mission to bring Melbourne's world renown specialty coffee and café experience to Singapore, Southeast Asia and beyond.

A trendy, modern café by day and a sleek, sophisticated bar/lounge in the evening, Chapter One by Fables Specialty Coffee is poised to be a unique and successful addition to the Singapore food and beverage scene. Anchored by our existing specialty coffee operations, our mission is to provide not only great food and beverages, but also a space for people to socialize and relax.

Drawing on the playful and nostalgic nature of our branding, we aim to provide an innovative selection of specialty coffee and premium non-coffee and alcoholic beverages to the community, along with a carefully crafted menu offering a good mix of innovative breakfast/lunch dishes as well as classic brunch fare by day and tapas/grazing plates in the evenings.

  • Prepare, cook, and present dishes according to the restaurant’s standards.

  • Ensure consistency in taste, quality, and presentation.

  • Follow recipes and portion control guidelines.

  • Maintain high hygiene and food safety standards (SFA/NEA compliance).

  • Ensure proper food storage, labeling, and rotation (FIFO).

  • Monitor freshness and quality of ingredients.

  • Assist Sous Chef and Head Chef with daily kitchen operations.

  • Work closely with team members for smooth kitchen flow during peak hours.
