Responsibilities

• Maintain stewarding operations in line with Rosewood, Forbes, LQA, HACCP and local health regulations.
• Clean, sanitize, and polish crockery, cutlery, glassware, cookware, and kitchen utensils.
• Operate dishwashing equipment safely to support hotel operations.
• Ensure all operating equipment is stored correctly and maintained in excellent condition.
• Maintain cleanliness and organization of stewarding areas, kitchens, restaurants, bars, meetings & events areas, and back-of-house facilities.
• Carry out daily cleaning schedules and deep cleaning tasks as assigned.
• Dispose of waste and recyclable materials per hotel procedures.
• Support the setup and breakdown of equipment for meetings & events.
• Report damaged equipment or hygiene concerns immediately.
• Follow instructions from the Stewarding Team Leader and Stewarding Manager.
• Maintain teamwork and flexibility across departments.
• Follow Health & Safety regulations and HACCP standards.

Job Summary

The Steward supports the daily operation of the Stewarding Department by ensuring the highest standards of cleanliness, sanitation, hygiene, and operational support are consistently maintained in line with Rosewood brand standards and the expectations of an ultra-luxury environment. Working across kitchens, restaurants, bars, meetings & events, and back-of-house areas, the Steward ensures all operating equipment, utensils, and work areas remain clean, organized, and ready to support seamless hotel operations. Working closely with the Stewarding Team Leader, Stewarding Manager, Culinary, Food & Beverage, and other departments, the Steward carries out daily cleaning and sanitation duties, maintains food safety standards, and contributes to a safe, efficient, and well-organized working environment.

Essential Duties and Responsibilities

Quality:

• Maintain stewarding operations in line with Rosewood brand standards, Forbes standards, LQA requirements, HACCP, and local health regulations.
• Clean, sanitize, and polish crockery, cutlery, glassware, cookware, kitchen utensils, and operating equipment according to hotel standards.
• Operate dishwashing equipment safely and efficiently to ensure continuous support of hotel operations.
• Ensure all operating equipment is stored correctly and maintained in excellent condition.
• Maintain cleanliness and organization of stewarding areas, kitchens, restaurants, bars, meetings & events areas, and all back-of-house facilities.
• Carry out daily cleaning schedules and deep cleaning tasks as assigned.
• Ensure all food contact surfaces are cleaned and sanitized according to established procedures.
• Dispose of waste and recyclable materials in accordance with hotel procedures and environmental standards.
• Support the setup and breakdown of equipment for Meetings & Events and other operational requirements.
• Report damaged equipment, maintenance issues, or hygiene concerns immediately.
• Ensure sufficient clean operating equipment is available throughout all service periods.
• Follow instructions provided by the Stewarding Team Leader and Stewarding Manager to support smooth daily operations.

Financial:

• Handle operating equipment carefully to minimize breakage and unnecessary loss.
• Use cleaning chemicals responsibly and avoid unnecessary waste.
• Report damaged or missing operating equipment promptly.
• Support inventory counts of operating equipment and stewarding supplies when required.
• Ensure responsible use of departmental resources and equipment.
• Contribute to cost control by maintaining proper care of all hotel assets.

Leading:

• Support the Stewarding Team Leader and Stewarding Manager in daily departmental operations.
• Work collaboratively with Culinary, Food & Beverage, Engineering, Housekeeping, and other hotel departments.
• Maintain professional grooming, appearance, and behavior at all times.
• Demonstrate a positive attitude and willingness to support operational requirements.
• Participate in departmental training and continuously develop operational knowledge and skills.
• Follow instructions and complete assigned duties efficiently and accurately.
• Communicate operational concerns promptly to supervisors.
• Maintain teamwork and cooperation with fellow associates.
• Demonstrate flexibility by supporting different operational areas as required by business levels.
