Position Overview:

A fine-casual dining in Saudi Arabia is looking to welcome a skilled and motivated Pastry Chef de Partie. In this role, the ideal candidate will support the pastry section of our lively kitchen, actively working on recipe refinement, menu innovation, and executing refined, creative desserts with precision. Key Responsibilities:

Support Pastry Operations:

  • Assist in overseeing day-to-day pastry production to ensure quality, efficiency, and consistency.
  • Support inventory management for pastry ingredients, including sourcing, rotation, and waste control.
  • Help in scheduling and supervising pastry staff to ensure smooth operations.

Contribute to Pastry Recipe Development:

  • Collaborate with the Head Pastry Chef in designing new desserts that align with the restaurant’s culinary vision.
  • Help refine existing recipes for flavor balance, seasonal updates, and production efficiency.
  • Suggest creative applications of regional ingredients for modern desserts.

Production and Quality Control:

  • Ensure all pastry items meet the restaurant’s quality and presentation standards.
  • Conduct regular tastings and quality checks to maintain flavor consistency and product integrity.
  • Assist in implementing prep systems for consistency and productivity.

Plating and Presentation:

  • Contribute to developing and executing clean, creative, and modern dessert plating.
  • Train junior staff on plating standards, portion control, and presentation techniques.
  • Stay updated on plating trends relevant to the fine-casual space.

Team Development and Leadership Support:

  • Support the Head Pastry Chef in mentoring and developing junior pastry staff.
  • Lead by example through discipline, professionalism, and a detail-oriented approach to pastry work.
  • Help foster a collaborative and respectful kitchen culture.

Assist in Cost and Budget Management:

  • Help monitor pastry section costs—including ingredient usage, portioning, and labor.
  • Recommend cost-saving ideas that maintain product quality and guest value.
  • Assist in maintaining accurate production and waste logs.

Enhance Guest Experience:

  • Work closely with the kitchen and front-of-house teams to ensure timely dessert service.
  • Be open to interacting with guests when needed, offering insights into dessert inspirations or receiving feedback.

Market Adaptation:

  • Support menu adaptation to reflect local tastes while maintaining an international pastry appeal.
  • Stay informed about trends in the Saudi and global dessert scene to inspire new offerings.
Qualifications:
  • Previous experience as a Pastry Chef de Partie or in a similar role in fine-casual or upscale dining environments.
  • Formal culinary or pastry education preferred.
  • Proven skills in pastry production, dessert development, and plating.
  • Strong organizational and leadership skills with the ability to work under pressure.
  • A creative mindset with a strong understanding of flavor, texture, and visual balance.
  • Fluent in English; Arabic is an asset.
