Position Summary
Executive Chef – Four Seasons Resort and Residences at The Pearl, Doha, Qatar.
Location
The Pearl-Qatar is a luxurious beachfront resort in Doha, featuring 161 furnished apartments and 84 private residences along a private beach with gardens, restaurants, bars, a spa, and pool areas.
Key Responsibilities
- Oversee all food production across Spuntino Restaurant, Duchess Tea Lounge, Loulou Plage, The Bar, In‑Room Dining, and the Employee Restaurant.
- Manage the Stewarding department to maintain highest cleaning practices.
- Develop menus, food purchase specifications, and recipes.
- Supervise kitchen and stewarding teams, ensuring adherence to quality, safety, and sanitation standards.
- Develop and monitor the food and labor budget for the department.
- Ensure compliance with health and safety regulations.
Essential Functions
- Plan menus for all resort food outlets.
- Schedule and coordinate the work of culinary staff to achieve budgeted labor costs.
- Approve requisition of products and food supplies.
- Maintain sanitation, cleanliness, and safety standards throughout kitchen areas.
- Establish controls to minimize food waste and theft.
- Implement safety and sanitation training for kitchen staff.
- Develop standard recipes and portion controls, aiding in menu pricing.
- Prepare budget data, monitor financial results, and take corrective action.
- Attend food and beverage staff and management meetings.
- Consult with the Food & Beverage Director on special events.
- Direct cooking operations that require skillful preparation.
- Control food and payroll costs for maximum profitability.
- Evaluate product quality and maintain high standards.
- Coordinate with management to exceed member expectations.
- Update policies and procedures for quality and safety.
- Maintain cleaning and maintenance schedules for kitchen areas.
- Provide training and professional development for staff.
- Represent kitchen staff at service lineups and meetings.
- Visit dining areas to engage with members.
- Support a safe work environment.
- Perform additional duties as directed.
- Interview, select, train, supervise, counsel, and discipline department employees.
- Develop and maintain a professional workforce.
- Ensure high‑professional service to members.
Preferred Qualifications & Skills
- Led culinary teams with high standards of customer service and food quality.
- Experience managing food costing, controls, and compliance.
- Developed fine dining menus and culinary offerings.
- Strong passion for food innovation and marketing.
- Excellent communication skills in English and local workplace language.
- Minimum of 6 years in a culinary, food and beverage, or related professional area.
- Experience in luxury hotel or resort environments preferred.
