The L10 In-Charge / Branch Head (PIC) at Sushi ZEN Manila

The core philosophy of this role is standardization—operating the store through data and SOPs rather than intuition.

Key Responsibilities

• Total Operations & QSC: You are the final shield for Quality, Service, and Cleanliness. You ensure the store looks, cleans, and tastes exactly as the brand intends, regardless of who is on shift.
• Financial & P&L Management: You own the store’s Profit & Loss statement. This includes driving sales through Local Store Marketing (LSM) and upselling, while strictly controlling Labor Costs (scheduling) and Food Costs (waste/theft).
• Cash & POS Integrity: You oversee all financial transactions, from petty cash and cashless payments (QRPH/Credit) to bank deposits and Z-reports. You are responsible for any cash discrepancies.
• People Leadership: You develop the L9 and L8 staff using factual performance records. The role requires "standard-based" coaching—giving feedback based on company rules rather than personal emotions.
• Risk & Food Safety: You manage the store’s HACCP compliance and staff health. You are the point person for all audits (internal and external) and must ensure all records are "audit-ready" at all times.
• Digital Communication: High reliance on tech tools like Slack, Confluence, and Excel. You are expected to be "IT literate," using these tools to find information independently and report facts clearly in English.
