Winford Manila Resort and Casino is seeking a Pastry Specialist to lead the production of cakes, pastries, desserts, and other bakery offerings for hotel, restaurant, banquet, café, and casino operations.
You will ensure quality, portioning, presentation, and compliance with HACCP and sanitation standards while collaborating with the culinary team. The role requires creativity, precision, and the ability to work under pressure in a fast-paced hospitality environment.
The Pastry Specialist is responsible for the preparation, production, presentation, and quality control of pastries, cakes, desserts, breads, and other bakery products for hotel, restaurant, banquet, café, and casino food-service operations. The position ensures consistent product quality, proper portioning, attractive presentation, food safety, sanitation, and efficient production in accordance with company standards and approved recipes.
Prepare and produce cakes, pastries, desserts, breads, cookies, chocolates, and other pastry products according to approved recipes and standards.
Ensure consistency in taste, texture, portion size, quality, and presentation.
Prepare ingredients, mise en place, fillings, creams, sauces, doughs, batters, and other pastry components.
Decorate and finish cakes, pastries, and desserts according to established presentation standards.
Assist in developing and testing new pastry products, seasonal offerings, buffet items, and special-event desserts.
Ensure timely production of pastry and bakery products for restaurants, cafés, banquets, room service, and casino food operations.
Follow HACCP, food safety, sanitation, and hygiene standards at all times.
Ensure proper storage, labeling, dating, and temperature control of ingredients and finished products.
Maintain cleanliness and sanitation of pastry workstations, ovens, mixers, refrigerators, utensils, and other equipment.
Work closely with the Pastry Chef, Chef de Partie, Sous Chef, culinary team, stewarding, and service departments.
Graduate of Culinary Arts, Baking and Pastry Arts, Hospitality Management, or a related course is preferred.
3–4 years of pastry and bakery experience, preferably in a hotel, resort, restaurant, casino, or high-volume food-service environment.
Knowledge of classical and modern pastry, baking, cake decoration, desserts, and chocolate work.
HACCP & food safety certification.
Ability to follow standardized recipes and production specifications.
Good understanding of portion control, food costing, and waste management.
TESDA NC II/NC III in Bread and Pastry Production or relevant culinary certification is an advantage.
Strong attention to detail and presentation.
Good communication and teamwork skills.
Ability to work under pressure in a fast-paced hotel and casino environment.
