Job summary

CITY GARDEN GRAND HOTEL in Makati City, Metro Manila, is recruiting a Commis Pastry/Baker to join our culinary team. The role supports the creation of breads, pastries, and desserts for our restaurants, room service, and events, under supervision of the Executive Chef.

We seek candidates with vocational pastry/baking training and at least 1 year of relevant experience, preferably in a hotel or high-volume environment. This is a full-time position based in Makati.

Qualifications

• Completed vocational training or certification in pastry arts or baking from a recognized culinary institution.
• Strong foundational knowledge of pastry techniques including lamination, tempering, and decoration.

Responsibilities

• Prepare and bake a variety of breads, pastries, cakes, and desserts according to established recipes and quality standards.
• Assist in production of laminated doughs: croissants, Danish pastries, puff pastry items.
• Portion, shape, and finish pastry products with precision.
• Maintain cleanliness and organization of the pastry kitchen, proper storage and labelling of ingredients.
• Monitor oven temperatures and baking times for consistency and quality.
• Prepare fillings, glazes, icings, and other pastry components as required.
• Assist with plating and presentation of desserts for service.
• Maintain food safety and hygiene per hotel policies and local regulations.
• Follow standardized recipes and techniques; learn new methods and innovations.
• Support senior pastry staff during high-volume periods and events.

About the role

CITY GARDEN GRAND HOTEL is seeking a talented and enthusiastic Commis Pastry/Baker to join our culinary team. This is a full-time position based in Makati City, Metro Manila. As a Commis Pastry/Baker, you will work under the supervision of our Executive Chef and senior pastry staff, supporting the creation of exceptional baked goods, pastries, and desserts for our hotel’s restaurants, room service, and special events. This role is fundamental to maintaining the high standards of quality and presentation that our guests expect from CITY GARDEN GRAND HOTEL.

Key responsibilities

• Prepare and bake a variety of breads, pastries, cakes, and desserts according to established recipes and quality standards
• Assist in the production of laminated doughs, including croissants, Danish pastries, and puff pastry items
• Portion, shape, and finish pastry products with precision and attention to detail
• Maintain cleanliness and organization of the pastry kitchen, including proper storage and labelling of ingredients
• Monitor oven temperatures and baking times to ensure consistency and quality of finished products
• Support the preparation of fillings, glazes, icings, and other pastry components as required
• Assist with plating and presentation of desserts for service
• Maintain food safety and hygiene standards in accordance with hotel policies and local regulations
• Follow standardized recipes and techniques whilst being open to learning new methods and innovations
• Support senior pastry staff during high-volume production periods and special events

What we're looking for

• Completed vocational training or certification in pastry arts or baking from a recognized culinary institution
• Minimum with atleast 1 year or internship experience in a pastry or baking environment, preferably in a hotel or high-volume food service setting
• Strong foundational knowledge of pastry techniques, including lamination, tempering, and decoration

• Ability to work efficiently in a fast-paced kitchen environment and meet production deadlines
• Knowledge of food safety, sanitation, and hygiene practices
• Physical capability to stand for extended periods, lift heavy items, and work in warm kitchen conditions
• A passion for pastry arts and a commitment to continuous learning and improvement

• Flexibility to work shifts, including early mornings, evenings, and weekends as required
