Job summary

Mandarin Oriental Makati is seeking a Chef de Partie - Baker to lead daily bakery operations, ensure top-quality breads and pastries, and uphold hotel standards in a luxury north Manila market. This preopening opportunity focuses on maintaining consistency, freshness, and culinary excellence within a collaborative kitchen team.

You will work to optimize recipes, supervise junior staff, and ensure strict food safety and inventory controls as part of a prestigious luxury brand opening in 2026.

Qualifications

• Diploma or certification in Culinary Arts, Baking, Pastry Arts, or a related field preferred.
• Minimum of 2-3 years of experience in a bakery or pastry kitchen, preferably in a luxury hotel, high-volume restaurant, or upscale bakery.
• Strong knowledge of bread making, pastry production, cake preparation, and bakery techniques.

Responsibilities

• Prepare, bake, and present a variety of breads, pastries, cakes, desserts, and other baked products to the highest quality standards.
• Manage the daily operations of the bakery section and ensure all products are prepared in a timely manner.
• Maintain consistency in recipes, portioning, taste, texture, and presentation.
• Monitor bakery production schedules to meet operational and guest requirements.
• Ensure proper handling, storage, and rotation of ingredients and finished products following HACCP and food safety standards.
• Conduct quality checks on all bakery items before service and presentation.
• Assist in menu development, seasonal offerings, and recipe enhancements as directed by the Sous Chef or Executive Pastry Chef.
