Job summary

Mandarin Oriental Makati is seeking an experienced Assistant Food & Beverage Manager to lead all F&B operations during the pre-opening phase and ongoing hotel operations, ensuring legendary service and operational excellence in a luxury Manila setting.

You will recruit, train, and develop the F&B team, implement SOPs, monitor budgets and costs, and coordinate with Culinary, Finance, Procurement and Engineering to ensure readiness and flawless guest experiences.

Qualifications

• Minimum of 5-7 years' experience in F&B operations within luxury or five-star hotel environments.
• Prior experience as Assistant F&B Manager or senior outlet leader is required.
• Pre-opening hotel experience is highly preferred.
• Strong knowledge of restaurant, bar, banquet, and in-room dining operations.
• Financial acumen with budgeting, forecasting, and cost control.
• Strong leadership, communication, and interpersonal skills.

Responsibilities

• Assist the F&B Manager in all pre-opening activities including outlet setup, planning, and service concept execution.
• Recruit, onboard, and train the F&B team in line with service culture.
• Develop SOPs, service sequences, and departmental policies.
• Coordinate with Culinary, Finance, Procurement, Engineering, Sales & Marketing to ensure readiness.
• Support menu engineering, beverage program development, and product selection.
• Oversee daily F&B operations to maintain brand standards and guest satisfaction.
• Monitor hygiene, safety, and compliance with local regulations.
