The Role
The Assistant Food & Beverage Manager supports the Food & Beverage Manager in overseeing all Food & Beverage operations of Mandarin Oriental Makati during the pre-opening phase and ongoing hotel operations. The role ensures the seamless execution of Mandarin Oriental’s legendary service standards, operational excellence, and financial performance across all dining venues, bars, banquets, and in-room dining.
This position plays a critical role in pre-opening activities including concept implementation, recruitment, training, systems setup, and supplier coordination, while acting as a key operational leader once the hotel opens.
Key Responsibilities
Pre-Opening Responsibilities
- Assist the Food & Beverage Manager in all pre-opening activities, including outlet setup, operational planning, and service concept execution.
- Support the recruitment, selection, onboarding, and training of the Food & Beverage team in alignment with Mandarin Oriental’s service culture.
- Participate in the development of standard operating procedures (SOPs), service sequences, and departmental policies.
- Coordinate with Culinary, Finance, Procurement, Engineering, Sales & Marketing, and other departments to ensure operational readiness.
- Support menu engineering, beverage program development, and product selection with a focus on quality, innovation, and brand positioning.
- Assist in trial runs, soft openings, and rehearsals to ensure smooth operational launch.
Operational Leadership
- Oversee daily Food & Beverage operations to ensure exceptional guest experiences across all outlets.
- Ensure all venues consistently meet Mandarin Oriental brand standards, quality expectations, and service excellence.
- Conduct regular floor presence and guest engagement to anticipate needs, resolve concerns, and build loyalty.
- Monitor hygiene, sanitation, and safety standards in compliance with local regulations and company policies.
Financial & Business Performance
- Assist in achieving departmental revenue, profitability, and cost-control targets.
- Monitor labor costs, productivity, and scheduling efficiency.
- Support inventory management, purchasing controls, and waste reduction initiatives.
- Analyze business performance reports and recommend operational and service improvements.
People Management & Development
- Support the development of a high-performing, engaged, and service-oriented Food & Beverage team.
- Coach, mentor, and motivate colleagues to drive service excellence and professional growth.
- Assist in performance evaluations, succession planning, and training effectiveness.
- Foster a culture of collaboration, accountability, and continuous improvement.
Guest Experience & Brand Representation
- Uphold Mandarin Oriental’s philosophy of legendary service at all times.
- Handle guest feedback, complaints, and service recovery with professionalism and empathy.
- Represent the Food & Beverage department in management meetings, hotel events, and guest interactions.
- Support VIP handling and special events to ensure flawless execution.
Qualifications & Experience
- Minimum of 5–7 years’ experience in Food & Beverage operations within a luxury or five-star hotel environment.
- Prior experience in an Assistant Food & Beverage Manager or senior outlet leadership role is required.
- Pre-opening hotel experience is highly preferred.
- Strong knowledge of restaurant, bar, banquet, and in-room dining operations.
- Financial acumen with experience in budgeting, forecasting, and cost control.
- Strong leadership, communication, and interpersonal skills.
- Passion for service excellence and luxury hospitality.
- Proficiency in hotel operations systems and Microsoft Office.
- Must be flexible with working hours, including weekends and holidays.
