Role Overview
The Assistant Bar Manager supports the Bar Manager in overseeing the daily operations of the bar, ensuring exceptional guest experiences in line with Mandarin Oriental’s Legendary Quality Experiences (LQE) standards. This role is responsible for driving operational excellence, maximizing revenue and profitability, and developing a high‑performing team while maintaining the highest levels of service, quality, and professionalism at Mandarin Oriental, Makati.
Key Responsibilities
Operational Excellence
- Support the Bar Manager in ensuring smooth and efficient day‑to‑day bar operations, maintaining the highest service standards at all times.
- Assist in developing, maintaining, and continuously improving the Bar Operations Manual, including policies, procedures, and service standards aligned with LQE.
- Monitor guest satisfaction throughout the bar experience, taking prompt and appropriate action to resolve any concerns.
- Ensure guest expectations are consistently met through efficient, personalized, and professional service.
- Coordinate closely with Housekeeping, Kitchen, Engineering, Purchasing, and Stewarding teams to ensure seamless operations and high service quality.
- Ensure cleanliness, maintenance, and overall presentation of the bar meet luxury hospitality standards.
- Maintain optimal stock levels, proper equipment functionality, and adequate staffing at all times.
- Monitor beverage quality, preparation, and service standards to ensure consistency and excellence.
- Uphold health, safety, hygiene, and sanitation standards in compliance with local regulations and company policies.
- Conduct daily briefings and regular team meetings to communicate updates, promotions, guest feedback, and operational priorities.
- Promote the identity and concept of the bar, creating personalized and memorable guest experiences.
- Stay informed of competitor offerings and industry trends to maintain a competitive edge.
Financial Management
- Assist in the preparation and execution of departmental Sales and Marketing plans.
- Ensure operational expenses are controlled in line with budget while maintaining quality standards.
- Support revenue growth initiatives by maximizing sales, increasing covers, and optimizing beverage offerings.
- Monitor and control costs through proper inventory management, requisitioning, and stock control procedures.
- Review and approve store requisitions, ensuring efficient use of resources without compromising service excellence.
Sales and Marketing
- Identify market trends and guest preferences in collaboration with the Food & Beverage Manager.
- Participate in promotional activities, public relations initiatives, and sales calls to enhance the bar’s reputation and profitability.
- Actively drive revenue through upselling, innovative beverage programs, and guest engagement.
- Propose creative ideas to enhance the concept, image, and positioning of the bar.
- Maintain comprehensive knowledge of hotel services and offerings to effectively promote cross‑selling opportunities.
People & Culture
- Assist in scheduling colleagues effectively to ensure optimal staffing levels and service quality.
- Ensure team members maintain Mandarin Oriental grooming standards and professional presentation at all times.
- Foster a positive and inclusive work environment, supporting colleague engagement, welfare, and development.
- Ensure all colleagues understand and adhere to company policies, procedures, and service standards.
- Support the performance management process, including coaching, counseling, and conducting performance appraisals.
- Oversee onboarding and orientation programs for new colleagues.
- Encourage participation in training programs to enhance competencies and service excellence.
- Support recruitment efforts by assisting in identifying and selecting suitable candidates.
Administrative Responsibilities
- Ensure accurate and timely completion of departmental reports, schedules, logbooks, guest feedback, and correspondence.
- Maintain effective documentation, including guest history records and operational reports.
- Ensure proper requisitioning procedures and control of supplies.
- Attend meetings and briefings as required by the Food & Beverage Manager and Hotel Management.
- Respond proactively to changes within the Food & Beverage environment and adapt operations accordingly.
Qualifications & Experience
- Diploma or Degree in Hospitality Management or a related field preferred.
- Minimum of 2–3 years’ experience in a supervisory role within a luxury bar or hotel environment.
- Strong knowledge of bar operations, beverage trends, and service excellence standards.
- Proven leadership, interpersonal, and communication skills.
- Strong financial acumen with the ability to manage costs and drive revenue.
- Excellent organizational and problem‑solving abilities with attention to detail.
- Demonstrates professionalism, grooming, and poise aligned with luxury hospitality standards.
- Ability to work flexible hours, including evenings, weekends, and public holidays.
- Fluency in English; additional language skills are an advantage.
