Job summary

Pulitzer Amsterdam is seeking a Junior Sous Chef to craft high-quality dishes with fresh ingredients and lead the partie when needed. You will organize the work floor, coach Chef De Parties, and act as the main communication point for Sous Chefs to ensure smooth service.

You will uphold HACCP standards, promote a positive Can Do attitude, and share the Pulitzer story with the team while supporting the kitchen during meetings and training sessions. Location is Amsterdam.

Qualifications

• Experience in running high-quality kitchen operations with ability to lead full service in absence of kitchen management.
• Strong understanding of HACCP principles and SOPs.
• Willingness to coach and train Chef De Parties and the team.

Responsibilities

• Prepare, compose and lay-out culinary dishes using fresh ingredients.
• Organize and lead the work floor in the partie with coaching and training of the Chef De Parties.
• Act as first backup and main communication point for the Sous Chefs and team.
• Maintain high guest satisfaction and uphold Pulitzer Amsterdam standards.
• Ensure compliance with house rules and hotel knowledge.
• Share the Pulitzer story and promote a positive Can Do attitude.

You Prepare, compose and lay-out culinary high quality dishes that mainly consist of fresh ingredients. Organizing and leading the work floor in the partie together with coaching and training of the Chef De Parties. The Junior Sous Chef can, in addition to running his own partie also help in at other parties and knows how to set priorities at all times in order to get everything done.

Within this position, care is taken for high guest satisfaction of the guests, Kitchen Chef, Executive Chef and has a supporting role towards the Sous Chefs and the team.

Monitor responsible use of the products/ingredients (HACCP) to contribute to process efficiency.

Within this function you have a coaching and teaching role in the team and you are the first backup and communication point for the Sous Chefs. You are an example for the team and are constantly the father figure looking for progress in order to motivate the team to deliver better performance.

You have these competencies;

• Compliance with the house rules
• Able to lead a full service on the workfloor as first in line in absence of the kitchen management as first communication point for Chef de Parties and Floor managers and supervisors.
• Compliance with the SOP’s
• Attending desired meetings and sessions
• Complete knowledge of the hotel
• Promoting a positive ‘Can Do’ attitude within Pulitzer Amsterdam
• Sharing of the ‘Pulitzer story’ storytelling
• Carrying out any other work that can reasonably be expected of you within the hotel
