BLACK PASTRY in Sibu, Sarawak is seeking a Senior Baker to lead our bakery operations. This full-time role focuses on delivering high-quality products and mentoring junior staff.

You will oversee production schedules, ensure food safety, and collaborate with management to develop new recipes. The ideal candidate has 5+ years of professional baking experience and strong leadership skills.

Qualifications

• Minimum 5+ years of professional baking experience in a commercial bakery or pastry kitchen.
• Bread, pastry, and cake decoration expertise.
• Strong knowledge of baking techniques, fermentation, and ingredient functionality.
• Demonstrated leadership and supervisory experience with the ability to train and mentor junior staff.
• Excellent understanding of food safety, hygiene and sanitation practices.

Responsibilities

• Preparing and baking a variety of bread, pastries, cakes, and confectionery items according to established recipes and quality standards.
• Managing inventory of baking ingredients and supplies, ensuring adequate stock levels and quality control.
• Operating and maintaining baking equipment, including ovens, mixers, and other specialised machinery.
• Training, supervising and mentoring junior bakers and baking staff to ensure consistent product quality and adherence to food safety standards.
• Developing and testing new baking recipes and products to expand our menu offerings.
• Ensuring compliance with health, safety and hygiene regulations throughout the bakery.
• Managing production schedules to meet daily demand whilst maintaining quality standards.
• Collaborating with management to optimise production processes and reduce waste.
• Maintaining detailed records of production, costs, and ingredient usage.

About the role

We are seeking an experienced Senior Baker to join the BLACK PASTRY team in Sibu, Sarawak. This is a full-time position that plays a crucial role in our bakery operations. As Senior Baker, you will be responsible for leading our baking operations, ensuring the highest quality of products, and mentoring junior baking staff. Your expertise and leadership will be instrumental in maintaining BLACK PASTRY's reputation for excellence and innovation in baking.

• Proficiency in operating commercial baking equipment and machinery
• Strong organisational and time management skills with the ability to manage multiple tasks simultaneously
• Attention to detail and commitment to producing consistently high-quality products
• Creativity and willingness to innovate and develop new recipes
• Good communication skills and a collaborative approach to working within a team
• Relevant baking qualifications or certifications (preferred but not essential)
