Job summary

AMICI FOOD SOLUTIONS SDN BHD in Malaysia is seeking a Lead Bakery Production to manage daily production, plan tasks, and ensure we meet schedules.

You will guide a team, train junior staff, monitor processes from mixing to baking, and ensure quality, weight and texture.

The role requires 3-5 years of bakery experience, certificate/diploma in baking, and willingness to work Tue-Sat in our central kitchen.

Qualifications

• Certificate or Diploma in Baking, Pastry Arts or Culinary Arts preferred.
• At least 3-5 years of relevant bakery experience, with experience guiding a team.
• Strong knowledge of bread production, dough handling, fermentation and baking techniques.
• Experience in a central kitchen or food manufacturing environment is an advantage.
• Able to manage production priorities while maintaining quality and hygiene standards.
• Willing to work 5 days, Tuesday-Saturday and according to the production schedule.

Responsibilities

• Lead daily bakery production and guide the team to meet production schedules and order requirements.
• Prepare breads, doughs and other bakery products according to approved recipes and specifications.
• Monitor mixing, proofing, baking and finishing to ensure consistent product quality.
• Plan daily tasks and manpower allocation, including Saturday production coverage.
• Check finished products for appearance, texture, weight and consistency before release.
• Train junior staff on baking techniques, equipment handling and production procedures.
• Monitor raw material usage, stock availability and storage conditions; coordinate replenishment with Procurement.
• Control wastage and support improvements in productivity and production costs.
• Maintain accurate batch, production, wastage and cleaning records.
• Ensure compliance with company food safety, hygiene, GMP and Halal procedures.
