Job summary

KAMPONG MALA SDN. BHD. is seeking a hands-on Kitchen Supervisor in Kuala Lumpur to oversee daily prep, cooking activities, and ensure dishes meet company recipes and standards.

You will coordinate with front-of-house staff to ensure orders are prepared accurately and served on time. This role requires strong teamwork, knowledge of kitchen hygiene, and the ability to work under pressure, including weekends and public holidays.

Qualifications

• Experience in a kitchen or F&B environment is required.
• Supervisory experience is preferred.
• Knowledge of food preparation, ingredient handling, and kitchen hygiene.
• Strong teamwork, communication, and organisational skills.
• Able to work shifts, weekends and public holidays.
• Hands-on, responsible, and able to work under pressure.
• Experience in mala tang is an advantage.

Responsibilities

• Supervise kitchen team and assign daily duties.
• Train new staff on food preparation, cooking procedures, and kitchen SOPs.
• Monitor stock levels and assist with inventory control.
• Maintain kitchen cleanliness, proper storage temperatures, and FIFO practices.
• Report ingredient shortages, equipment issues, and operational problems to management.
• Ensure daily kitchen checklists and records are completed accurately.

Job description

Supervise daily kitchen preparation and cooking activities.

Ensure ingredients, soup bases, sauces, and other food items are prepared according to company recipes and standards.

Ensure orders are prepared accurately and served on time.

Monitor kitchen workflow and coordinate with front-of-house staff.

Food Quality & Inventory

Check the freshness, quality, and proper storage of ingredients.

Monitor stock levels and inform management when replenishment is needed.

Assist with stocktaking, receiving deliveries, and inventory control.

Minimise food wastage and ensure proper portion control.

Staff Supervision

Assign daily duties and supervise kitchen team members.

Train new staff on food preparation, cooking procedures, and kitchen SOPs.

Monitor staff productivity and ensure sufficient preparation for peak periods.

Support the Kitchen Manager or Store Manager in managing kitchen manpower.

Food Safety & Hygiene

Maintain kitchen cleanliness and sanitation.

Ensure proper food handling, storage temperatures, and FIFO practices.

Ensure kitchen equipment is used properly and kept in good condition.

Follow applicable food safety and workplace safety requirements.

Reporting & Coordination

Report ingredient shortages, equipment issues, and operational problems to management.

Assist in monitoring food costs, stock usage, and kitchen performance.

Ensure daily kitchen checklists and records are completed accurately.

Requirements

Previous experience in a kitchen or F&B environment; supervisory experience is preferred.

Knowledge of food preparation, ingredient handling, and kitchen hygiene.

Strong teamwork, communication, and organisational skills.

Able to work shifts, weekends, and public holidays.

Hands-on, responsible, and able to work under pressure.

Experience in mala tang is an advantage.
