Job summary

Accor in Malaysia seeks a seasoned Bakery Operations Leader to oversee all bakery activities, ensure top-quality products, and lead a high-performing team. You will drive menu development, maintain strict hygiene and cost controls, and collaborate with outlets and banquet operations to elevate dining experiences.

You will guide staff, manage rosters, train junior chefs, and uphold SOPs across all bakery processes, ensuring consistent quality and service excellence.

Qualifications

• Diploma or Professional Certificate in Culinary Arts, Bakery & Pastry (or equivalent).
• 5-8 years of bakery operations experience, preferably in a 5-star luxury hotel.
• Proven experience leading a bakery team with production knowledge and standards.

Responsibilities

• Oversee and manage overall bakery operations within the outlet and hotel.
• Supervise staff, prepare duty rosters, schedule off days, annual leave and public holidays.
• Lead menu development and new product innovations across outlets and banquet operations.
• Monitor trends, culinary developments, and industry innovations to stay competitive.
• Ensure consistent quality, presentation, and standardized recipes across operations.
• Maintain hygiene, food safety, HACCP compliance, and cost control to meet financial targets.
• Provide guidance and training to team members; participate in meetings and inter-outlet transfers as needed.
• Standardize, document, and maintain recipes in the hotel recipe management system; enforce SOPs and policies.
• Develop and implement SOPs, organizational systems, and continuous improvement initiatives.
