Hot Buns Co. is looking for a dependable and hardworking Commis Chef to join our kitchen team.
We are an elevated burger restaurant specialising in smash burgers, house-made buns, patties, sauces, sides and other casual dining dishes. This role involves both central kitchen production and service kitchen operations, so you must be comfortable preparing food in batches, maintaining consistency and working quickly during busy service periods.
This position is open to Malaysian citizens and foreign candidates who hold a valid Malaysian work permit for the service sector.
Prepare ingredients and food items according to approved recipes, portion sizes and presentation standards.
Complete daily mise en place and set up the kitchen station for breakfast, lunch or dinner service.
Assist with the preparation and production of burger patties, buns, sauces, garnishes, sides and other menu items.
Support central kitchen production, including batching, portioning, packing, labelling and storing products.
Follow production schedules and prepare enough food based on estimated demand without overproducing.
Check daily par levels and identify items that need to be prepared, defrosted or replenished.
Inform supervisors early about shortages, low stock or unavailable ingredients.
Work on the kitchen line during service and prepare guest orders accurately and consistently.
Handle high-volume service while maintaining speed, cleanliness and food quality.
Follow order tickets carefully and communicate clearly with the kitchen and service teams.
Ensure every dish is prepared according to recipe cards and presentation standards.
Assist other kitchen stations when required during busy periods.
Remain calm, focused and organised under pressure.
Label and date all prepared food and storage containers.
Follow FIFO stock rotation procedures.
Ensure chilled, frozen and hot food is stored and maintained at the correct temperatures.
Cover, label and return unused ingredients to the correct storage area after service.
Monitor product freshness, expiry dates and food quality.
Follow all hygiene, food safety and sanitation procedures.
Keep raw and cooked ingredients properly separated.
Operate kitchen equipment safely and correctly.
Clean and maintain kitchen equipment according to the cleaning schedule.
Keep workstations, floors, storage areas and preparation areas clean and organised.
Report damaged, faulty or unsafe equipment immediately.
Follow opening, closing and deep-cleaning procedures.
Assist with receiving, checking and storing incoming ingredients.
Monitor kitchen stock levels and inform supervisors when items need to be reordered.
Control food waste, spoilage and overproduction.
Follow correct portion sizes to maintain food quality and food cost.
Record wastage, damaged items and production errors accurately.
Assist with stock counts when required.
Support the kitchen team in identifying and correcting food cost or wastage issues.
Communicate clearly and respectfully with chefs, supervisors and service staff.
Work professionally and harmoniously with all team members.
Follow instructions from senior chefs and supervisors.
Be willing to learn new stations, recipes and preparation methods.
Support colleagues during preparation, service and closing.
Accept feedback positively and continuously work to improve.
Maintain a responsible, punctual and cooperative attitude.
Minimum one year of kitchen or food and beverage experience.
Experience working in a restaurant, café, central kitchen or fast-casual kitchen is preferred.
Basic knowledge of food preparation, cooking methods and kitchen safety.
Able to follow recipes, portion sizes and preparation instructions accurately.
Able to work quickly and efficiently during busy service periods.
Good communication and teamwork skills.
Good personal hygiene and attention to cleanliness.
Physically able to stand for long periods and carry kitchen supplies.
Able to work weekends, public holidays and rotating shifts.
Willing to learn and take on different kitchen responsibilities.
Malaysian citizen or holder of a valid Malaysian work permit for the service sector.
Experience preparing burgers, burger patties, buns or sauces.
Experience working with a flat-top grill and deep fryer.
Experience with batch production and central kitchen operations.
Experience with food labelling, FIFO rotation and inventory control.
Experience working in a high-volume or fast-paced kitchen.
Basic knowledge of food costing, portion control and wastage management.
