Job summary

Hyatt Regency Kuantan Resort is seeking an Assistant Manager – Halal & Hygiene to lead Halal Assurance and Food Safety initiatives across the hotel, ensuring compliance, hygiene, and operational excellence. The role oversees HAS, audits, and supplier compliance while collaborating with various departments.

The ideal candidate will have strong Halal Assurance, HACCP, and hospitality operations experience, and be passionate about maintaining world-class standards within a luxury hotel environment.

Qualifications

• Experience in Halal Assurance and HACCP within hospitality settings.
• Ability to lead committees and audits across hotel operations.
• Strong knowledge of hygiene, food safety regulations, and regulatory compliance.

Responsibilities

• Lead the Internal Halal Committee (IHC) and oversee the implementation of the Halal Assurance System (HAS).
• Ensure compliance with Halal Consumer Requirements, HACCP, food safety regulations, and hotel hygiene standards.
• Conduct regular hygiene inspections, risk assessments, and food safety audits across all food production and service areas.
• Manage Halal documentation, verify supplier and raw material compliance, and oversee certification requirements.
• Collaborate with Operations, Culinary, Procurement, Human Resources, and external authorities to maintain regulatory compliance.
• Lead hygiene and Halal training programs, promoting a strong culture of food safety and continuous improvement.
• Monitor sanitation practices, pest control, temperature records, and food handling procedures to ensure audit readiness and operational excellence.
