ASSISTANT MANAGER – DURIAN STATION & D’CAFE
Responsible for assisting in the overall management of the Durian Station and D’Cafe, ensuring efficient daily operations, accurate stock and sales control, high product and service quality, effective staff supervision, excellent customer experience, food safety compliance, cost control, and achievement of sales and operational targets.
JOB RESPONSIBILITIES
1. Overall Operations Management
- Assist the Manager in overseeing the daily operations of the Durian Station and D’Cafe.
- Ensure both outlets are opened, operated and closed according to established procedures.
- Coordinate daily activities to ensure smooth workflow, especially during peak durian season.
- Ensure facilities, equipment, furniture, signage and customer areas are maintained in good condition.
- Resolve day-to-day operational issues and report significant matters to Management.
- Coordinate the receiving of durian from the field.
- Verify the quantities, varieties/clones, grades, quality and condition of durian received.
- Supervise the sorting, grading, weighing, displaying, packing and storage of durian.
- Ensure proper handling to minimise fruit damage, spoilage and losses.
- Monitor daily durian stock movement, including Opening Stock → Received → Sold → Processed → Rejected/Wastage → Closing Stock.
- Coordinate the allocation of durian for whole-fruit sales, frozen whole fruit, pulp/paste processing and D’Cafe requirements.
- Ensure traceability of durian received from the plantation to the point of sale, where required.
3. D’Cafe Operations
- Supervise daily food and beverage preparation and service.
- Ensure menu items are prepared according to approved recipes, portion sizes, presentation and quality standards.
- Monitor the availability of ingredients, beverages, packaging materials and other supplies.
- Coordinate purchasing and replenishment to prevent stock-outs or excessive inventory.
- Monitor food wastage and ensure proper portion control.
- Ensure kitchen, preparation, dining and service areas are kept clean and organised.
- Monitor daily sales performance for both the Durian Station and D’Cafe.
- Ensure all sales are properly recorded through the approved cashier system.
- Verify cash, QR/e-wallet, bank transfer and other payment transactions.
- Conduct daily sales reconciliation with the cashier.
- Identify opportunities to increase sales through promotions, bundles, upselling and seasonal products.
- Monitor customer demand and recommend suitable pricing, promotions and product offerings to Management.
5. Inventory & Stock Control
- Maintain accurate records of durian, food ingredients, beverages, packaging, merchandise and operating supplies.
- Conduct regular physical stock counts.
- Investigate stock discrepancies and unusual wastage.
- Apply FIFO/FEFO principles where appropriate.
- Establish minimum and reorder stock levels for essential items.
- Ensure high‑value and perishable stock is properly controlled.
6. Staff Supervision
- Prepare and coordinate staff duty rosters.
- Assign daily duties and ensure adequate manpower during busy periods.
- Conduct staff briefings before operations.
- Monitor staff attendance, punctuality, discipline, grooming and performance.
- Train staff in customer service, product knowledge, food handling, durian handling, POS operations and SOP compliance.
- Report disciplinary or performance‑related issues to the Manager.
7. Customer Service
- Ensure customers receive prompt, professional and friendly service.
- Handle customer enquiries regarding durian varieties, grades, prices, products and the D’Cafe menu.
- Manage customer complaints and resolve issues appropriately.
- Monitor customer feedback and recommend improvements.
- Ensure the overall customer experience reflects the Company’s desired service standards.
8. Hygiene, Food Safety & Compliance
- Ensure compliance with food hygiene and food‑handling requirements.
- Monitor the cleanliness of the kitchen, dining area, Durian Station, toilets, storage areas and surrounding premises.
- Ensure staff comply with personal hygiene and food safety procedures.
- Monitor pest control, waste disposal, cleaning schedules and sanitation.
- Ensure food and ingredients are stored at appropriate temperatures.
- Maintain relevant inspection, cleaning, temperature and food safety records.
9. Cost & Wastage Control
- Monitor operating costs, including ingredients, packaging, utilities, labour and consumables.
- Record and analyse durian spoilage, rejected fruit, food wastage and stock losses.
- Identify causes of excessive wastage and implement appropriate corrective actions.
- Assist Management in improving gross profit margins without compromising product quality.
- Monitor the usage of electricity, water, gas and other resources.
10. Reporting & Administration
Prepare and submit regular reports covering:
- Daily Durian Station sales.
- D’Cafe daily sales.
- Durian received and sold.
- Closing inventory.
- Durian allocation and processing.
- Food and beverage inventory.
- Wastage and spoilage.
- Cash/POS reconciliation.
- Staff attendance.
- Customer complaints.
- Operational issues.
- Maintenance requirements.
REQUIREMENTS
- Bachelor’s Degree in Business Administration, Hospitality Management, Food & Beverage Management, Operations Management, Supply Chain Management, Agriculture/Agribusiness, Finance/Accounting or a related field.
- Minimum 2–3 years of relevant working experience.
- Candidates with experience in F&B, retail, inventory, warehouse, purchasing, supply chain or business operations are encouraged to apply.
- Strong Microsoft Excel skills, particularly in PivotTables, formulas, data analysis, dashboards and reporting.
- Strong analytical skills with the ability to analyse sales trends, food costs, gross margins, stock movement, wastage, manpower productivity, inventory turnover and profitability.
- Able to assist in preparing budgets, forecasts, KPIs and management reports.
- AI literate, with the ability to use AI tools effectively for analysis, research, reporting, SOP preparation, presentations, data interpretation and process improvement.
- Knowledge of Power BI, dashboard tools, POS systems or inventory management systems will be an added advantage.
- Good command of Bahasa Malaysia and English, particularly for management reporting.
- Willing to work and stay in Membakut.
