Job summary

La Roqqa Hotel in Porto Ercole is seeking a Pastry Chef de Partie for the 2027 summer season, reporting to the Pastry Chef. You will manage a pastry section, ensuring high-quality desserts, viennoiserie, and event prep, while supporting the team and production planning.

Ideal candidates have 3–4 years in luxury kitchens, a pastry diploma, and strong pastry techniques. The role includes seasonal contract with CCNL Tourism and meal vouchers, with relocation options if needed.

Qualifications

• 3–4 years in luxury/fine dining or 5-star hotels; at least 1 year as Chef de Partie.
• Hospitality school or pastry course completed.
• Excellent knowledge of classic and modern pastry techniques: doughs, creams, viennoiserie, puff pastry, chocolate work.

Responsibilities

• Own a section of the pastry brigade and produce breakfast viennoiserie to desserts for the restaurant.
• Coordinate and train the commis in your section; support Pastry Chef on planning and stock management.
• Develop new pastry creations and ensure quality, consistency, and high standards.
