Reporting To: Manager / Senior Manager - Malt & Distillation
1. Job Purpose
To manage and support day-to-day operations of the Malt and Distillation process , ensuring safe, efficient, consistent and compliant production while meeting quality, productivity, yield and cost objectives.
2. Key Responsibilities
- A. Malt Operations
- Monitor and manage malt production activities including raw material handling, cleaning, steeping, germination, kilning and malt storage .
- Ensure optimum process parameters are maintained for consistent malt quality.
- Monitor raw material consumption, process losses, yield and productivity.
- Coordinate with Quality and Laboratory teams for testing and release of malt.
- Identify process deviations and implement corrective actions.
- B. Distillation Operations
- Monitor and control distillation operations as per defined SOPs and process parameters.
- Ensure efficient operation of fermentation, distillation, spirit recovery and related processes .
- Monitor alcohol yield, recovery, energy consumption and process losses.
- Ensure effective utilisation of plant equipment and minimise downtime.
- Support troubleshooting of process and equipment-related issues in coordination with Engineering.
- C. Production Planning & Performance
- Execute daily production plans in line with business requirements.
- Track key production KPIs including yield, productivity, quality, OEE, energy consumption and process losses .
- Analyse deviations from production targets and initiate corrective actions.
- Maintain accurate production records, logbooks and MIS reports.
- Support continuous improvement initiatives for productivity, yield and cost optimisation.
- D. Quality & Process Control
- Ensure adherence to defined process standards, SOPs and quality specifications.
- Coordinate with Quality teams to maintain consistent product quality.
- Investigate process deviations, quality issues and customer/internal complaints.
- Drive root-cause analysis and implementation of corrective and preventive actions.
- E. Safety, Compliance & Sustainability
- Ensure strict adherence to EHS standards, statutory requirements, SOPs and work permit systems .
- Promote safe working practices and identify potential hazards in the process area.
- Ensure compliance with applicable Excise, environmental and statutory requirements .
- Drive initiatives related to water, steam, energy and other resource optimisation.
- Participate in safety audits, inspections and implementation of action plans.
- F. People & Cross-Functional Coordination
- Coordinate with Quality, Engineering, EHS, Stores, Utilities and Supply Chain teams for smooth operations.
- Guide operators and workmen in effective execution of process activities.
- Support skill development, training and competency building of team members.
- Promote a culture of ownership, discipline, teamwork and continuous improvement.
- G. Continuous Improvement
- Identify opportunities for improvement in yield, productivity, quality, energy efficiency and cost .Participate in Lean / CI projects and implement best practices.
- Support automation and digitalisation initiatives in manufacturing processes.
- Benchmark processes and identify opportunities to improve operational efficiency.

4. Qualification & Experience
- Education:
- B.E./B.Tech in Chemical Engineering / Food Technology / Biotechnology / Distillery Technology or equivalent.
- Relevant technical qualification in Malt & Distillation / Alcohol Technology will be an advantage.
- Experience:
- Approximately 3-6 years of relevant experience in Malt, Distillation, Brewery, Distillery, Alcohol Manufacturing or a similar process industry.
- Hands-on experience in fermentation and distillation operations will be preferred.
- Experience in process optimisation, production planning and manufacturing KPIs is desirable.
