Qualifications

  • Freshers may be considered for the Trainee position.
  • Hands-on experience in raw material and finished goods analysis, testing and documentation.
  • Basic knowledge of FSSAI regulations, GMP/GLP and labelling requirements preferred.

Responsibilities

  • Conduct analytical testing of raw materials as per approved specs and FSSAI standards.
  • Coordinate routine analytical testing of raw materials and finished goods.
  • Review COA, specifications and test reports for compliance.
  • Verify identity, purity, moisture and other quality parameters.
  • Follow SOPs, GLP/GMP and safety procedures at all times.
  • Maintain laboratory records, data and material registers for traceability.

Job description

Position: Research & Development- Officer/ Trainee

Location: Nemam (Chennai Factory)

Job Type: Permanent

Job Purpose:
  • Perform analytical testing of raw materials and finished goods (FG) for Pie, Pepero, and confectionery products.
  • Support regulatory compliance by reviewing and understanding applicable labelling regulations for artwork approval.
  • Maintain laboratory records, analytical documentation, and incoming material registers accurately and systematically.
  • Support product development, quality evaluation, and raw material analysis activities in accordance with Lotte specifications.
Qualification & Experience
  • Qualification: B.Sc./M.Sc. in Food Technology, Food Science, Chemistry, Microbiology, or a related discipline.
  • Experience: 13 years of relevant experience in R&D, Quality Control, Food Testing, or Analytical Laboratory within the food/confectionery industry.
  • Freshers with relevant academic/laboratory exposure may be considered for the Trainee position.
  • Hands-on experience in raw material and finished goods analysis, laboratory testing, and documentation will be an added advantage.
  • Basic knowledge of FSSAI regulations, GMP/GLP, food labelling requirements, and analytical testing methods is preferred.
Key Responsibilities:
  • Conduct analytical testing of raw materials as per approved specifications, FSSAI standards, and established internal procedures.
  • Perform and/or coordinate routine analytical testing of raw materials and finished goods using approved analytical methods.
  • Review analytical test results, Certificates of Analysis (CoA), specifications, and test reports to ensure compliance with defined requirements.
  • Verify the identity, purity, assay, moisture content, and other applicable quality parameters of raw materials and finished goods.
  • Follow SOPs, approved analytical methods, GLP/GMP requirements, and laboratory safety procedures always.
  • Assist in analytical method verification/validation, instrument calibration, and routine laboratory activities.
  • Maintain accurate laboratory records, worksheets, raw data, incoming material registers, and other analytical documentation.
  • Conduct monthly comparative analysis of Lotte and Orion Choco Pie market samples and prepare the relevant observations/reports.
  • Support the Regulatory team in reviewing and obtaining approval for product artwork in line with applicable labelling regulations.
  • Support the Product Development team during laboratory and plant trials for Pie, Pepero, and other confectionery products.
  • Support the SCM team in evaluating alternate raw material suppliers through analytical testing against Lotte-approved specifications.
  • Coordinate with Quality, Regulatory, Product Development, SCM, and other relevant functions to support R&D and product quality activities.
  • Ensure all laboratory activities and analytical results are properly documented and maintained for traceability and compliance.
