The QC Analyst is responsible for conducting quality checks, laboratory analysis, and inspection activities for raw materials, in-process products, packaging materials, and finished confectionery products. The role ensures compliance with food safety standards, quality specifications, GMP, HACCP, and regulatory requirements to maintain consistent product quality and customer satisfaction.
Key Responsibilities
Raw Material & Packaging Inspection
- Inspect and test incoming raw materials such as sugar, glucose syrup, cocoa, flavors, colors, milk powder, fats, and packaging materials.
- Verify supplier COA (Certificate of Analysis) and approve/reject materials based on specifications.
- Maintain sampling and retention records.
In-Process Quality Monitoring
- Conduct line inspections during production of candies, chocolates, toffees, gums, and confectionery products.
- Monitor process parameters such as temperature, moisture, weight, texture, pH, and appearance.
- Ensure GMP, hygiene, and food safety practices are followed on the production floor.
Laboratory Testing
- Perform physical, chemical, and microbiological analysis of raw materials and finished goods.
- Conduct moisture analysis, pH testing, viscosity checks, sensory evaluation, and shelf-life studies.
- Maintain laboratory instruments and calibration records.
Documentation & Compliance
- Prepare QC reports, batch release records, and non-conformance reports.
- Maintain SOPs, test records, calibration logs, and quality documentation.
- Support internal audits, customer audits, and regulatory inspections.
Product Release & Corrective Action
- Approve or reject products based on quality standards.
- Investigate deviations, customer complaints, and quality issues.
- Coordinate with Production, R&D, and Stores teams for corrective and preventive actions (CAPA).
Food Safety & Hygiene
- Ensure compliance with HACCP, FSSAI, GMP, and food safety standards.
- Monitor sanitation and pest control activities.
- Participate in food safety and quality improvement initiatives.
Required Qualifications
- B.Sc / M.Sc in Food Technology, Chemistry, Microbiology, Biotechnology, or related field.
- 1–4 years of experience in QC/QA within confectionery, food, FMCG, or chocolate manufacturing industry.
- Freshers with relevant internship exposure may also apply.
Required Skills
- Knowledge of GMP, HACCP, FSSAI, and food safety standards.
- Understanding of confectionery manufacturing processes.
- Familiarity with laboratory testing equipment and analytical methods.
- Strong attention to detail and documentation skills.
- Good communication and problem-solving abilities.
- Proficiency in MS Office and quality reporting systems.
Preferred Skills
- Experience in candy, chocolate, bakery, or FMCG industry.
- Knowledge of ISO 22000 / BRC standards.
- Exposure to sensory evaluation and shelf-life analysis.
Working Conditions
- Factory and laboratory environment.
- Rotational shifts may be applicable.
