Job summary

Indalc Spirits Private Limited seeks a Deputy Production Head to lead end-to-end ENA operations of the distillery plant. You will report to the Plant Head, execute production strategy, and drive efficiency, yield optimization, and cost control across milling to final ENA production.

The role requires 10+ years in ENA distillery operations with at least 5+ years in a senior leadership position, along with strong cross-functional coordination and a track record of continuous improvement.

Qualifications

• 10+ years in ENA distillery operations.
• Minimum 5+ years in a senior leadership role (Deputy Production Head / Operations Head).
• Experience with large capacity plants (100-300+ KLPD).
• Deep distillery process and plant integration knowledge.

Responsibilities

• Lead and manage end-to-end ENA operations of the distillery plant.

• Drive operational excellence, cost optimization, and continuous improvement.
• Develop SOPs, KPIs and lead audits/compliance activities.
• Mentor shift incharges and operators; coordinate with utilities, maintenance, and lab.
• Analyze data and prepare performance reports for the Plant Head.

Job description

The Role

We are seeking an experienced and result-driven Deputy Production Head to lead and manage end-to-end ENA operations of the distillery plant. The role involves overseeing all process sections fromMilling to Final ENA production, ensuring high efficiency, optimal yield, cost control, and compliance with quality and environmental standards.

The position will report directly to the Plant Head and will be responsible for executing production strategy, achieving operational targets, and driving continuous improvement across all process areas.

Responsibilities

• Lead and manage complete plant operations:
  • Milling → Liquefaction → Fermentation → Distillation → Evaporation → Dryer
• Work closely with the Plant Head to:
  • Execute ENA & Ethanol production plans and targets
  • Drive operational excellence and cost optimization
  • Implement strategic improvements
  • Yield and recovery optimization
• Monitor and improve Fermentation efficiency, distillation recovery, and process losses
• Drive reduction in Steam consumption, power consumption, and water usage
• Oversee ZLD system (ETP, CPU, Evaporation, Dryer integration)
• Ensure strict adherence to:
  
  • Quality standards for ENA
  • Pollution Control Board norms
• Lead cross-functional coordination with:
  
  • Utilities (Boiler, TG, WTP, ETP)
  • Maintenance (Mechanical, Electrical, Instrumentation)
  • Lab / Quality team
• Analyze daily, shift, and monthly data to drive improvements and provide regular updates and performance reports to the Plant Head
• Develop and implement SOPs, KPIs, and best practices
• Handle audits, compliance, and statutory requirements
• Lead and mentor all shift incharges and operators

Qualifications

Must have

• B.Tech / M.Tech in Chemical Engineering
• 10+ years experience in ENA Distillery Plant
• Minimum 5+ years in senior leadership role (Deputy Production Head / Operations Head)
• Experience handling large capacity plants (100-300+ KLPD) preferred
• Deep understanding of distillery process and plant integration
