Killashee Hotel is seeking a Head Breakfast Chef to lead our breakfast kitchen, ensuring exceptional guest meals and high standards every morning. You’ll supervise a busy team, manage prep, and coordinate with senior chefs to deliver exquisite breakfast offerings.

Qualifications

• Has proven experience as a Chef, preferably within a hotel or busy breakfast operation.
• Has supervisory or leadership experience.
• Excellent knowledge of food safety and HACCP procedures.
• Can work calmly and efficiently under pressure.
• Strong organisational and communication skills.
• Reliable, punctual, and professional.
• Able to lead by example and motivate a kitchen team.
• Flexible to work early mornings, weekends and public holidays.

Responsibilities

• Lead and supervise the breakfast kitchen team.
• Prepare and oversee high‑quality breakfast dishes.
• Ensure breakfast service runs smoothly, efficiently and on time.
• Maintain high standards of food quality, presentation and portion control.
• Manage mise en place and prep for service.
• Monitor stock levels and assist with ordering and rotation.
• Minimise waste and maintain cost controls.
• Ensure HACCP, food safety and health & safety standards are followed.
• Keep kitchen clean, organised and professional.
• Train and motivate junior kitchen staff.

Main Duties:

• Lead and supervise the breakfast kitchen team.
• Prepare and oversee the preparation of high-quality breakfast dishes.
• Ensure breakfast service runs smoothly, efficiently, and on time.
• Maintain consistently high standards of food quality, presentation, and portion control.
• Manage daily mise en place and ensure adequate preparation for service.
• Monitor stock levels and assist with ordering and stock rotation.
• Minimise food waste and maintain effective cost controls.
• Ensure full compliance with HACCP, food safety, and health & safety standards.
• Maintain a clean, organised, and professional kitchen environment.
• Train, support, and motivate junior members of the kitchen team.
• Work closely with the Executive Chef, Head Chef, and Front of House team.
• Respond professionally to guest requests and dietary requirements.
• Assist with menu development and seasonal breakfast offerings where required.
