Job summary

Fairmont Singapore and Swissôtel The Stamford is seeking an Executive Chef for SKAI Restaurant to lead culinary operations in a luxury hotel setting.

You will design menus, manage food costs, ensure HACCP compliance, and mentor a high-performing team, delivering exceptional guest experiences.

This role requires 8–10 years of progressive leadership in fine dining, with Michelin-starred experience preferred.

Qualifications

• Diploma or Degree in Culinary Arts, Hospitality Management, or related discipline.
• Proven experience as an Executive Chef in luxury hotels or premium dining.
• Michelin-starred or award-winning restaurant experience preferred.
• Strong leadership and team development abilities.

Responsibilities

• Lead the daily operations of the SKAI kitchen, ensuring smooth and efficient service.
• Develop creative, seasonal, and innovative menus.
• Ensure dishes are prepared to approved recipes, presentation standards, and portion controls.
• Monitor food production to minimize waste and maximize profitability.
• Collaborate with the Food & Beverage team on promotions and campaigns.
• Maintain the highest standards of food safety, HACCP compliance, and hygiene.
• Lead by example and mentor culinary staff.
