O'Donoghue Ring Collection in Killarney is seeking a Chef de Partie to deliver high-quality dishes in a fast-paced, high-standard kitchen. You will work with our culinary leadership to maintain excellence across three hotels in Killarney, supporting junior staff and contributing to menu development.

You will uphold HACCP and food safety standards, lead your section, and participate in briefs and training. A flexible schedule including weekends is required in a vibrant, guest-focused team.

Qualifications

• Previous Chef de Partie experience in a 4-star hotel or equivalent.
• Strong knowledge of HACCP and food safety procedures.
• Excellent communication and teamwork in a fast-paced kitchen.

Responsibilities

• Prepare, cook and present high-quality dishes for your designated section.
• Supervise and guide junior chefs and support development.
• Uphold hygiene and food safety regulations, including HACCP.
• Collaborate on menu development with Head and Sous Chef.
• Manage mise en place for your section.
• Monitor stock and assist with ordering to minimize waste.

About the Role

As Chef de Partie, you will play a key role in delivering high-quality dishes that consistently exceed guest expectations. You will work closely with our culinary leadership team to maintain the high standards of our kitchen, support junior staff, and contribute to the ongoing innovation of our food offering.

We are currently inviting applications for Chef de Partie positions across our three Killarney hotels: Killarney Towers Hotel, Killarney Plaza Hotel & Spa, Killarney Avenue Hotel.

Key Duties and Responsibilities

• Prepare, cook and present high-quality dishes across your designated section.
• Supervise and guide Commis and Demi Chefs, supporting their development and ensuring consistent performance.
• Uphold all food hygiene and safety regulations, including HACCP, and ensure your section operates in line with company standards.
• Collaborate with the Head and Sous Chef on menu development, offering seasonal, creative, and cost-effective suggestions.
• Manage mise en place for your section, ensuring readiness for each service.
• Monitor stock levels, assist with ordering, and apply correct stock rotation practices to minimize waste.
• Maintain a clean, organized, and safe working environment at all times.
• Take part in regular kitchen briefings, training sessions, and team meetings.
• Be adaptable to a flexible schedule that includes weekends and holidays based on business needs.

About You

• Previous experience working as a Chef de Partie in a 4-star hotel or similar high-standard kitchen is essential.
• Strong knowledge of HACCP and food safety procedures.
• Excellent communication skills and the ability to work well in a fast-paced team environment.
• Strong attention to detail and pride in food presentation and consistency.
• Fluent English is required.
• Candidates must have a legal right to work in Ireland.
• Experience in the hospitality industry is preferred.
